    In my memory, breakfast stalls always had tofu pudding. Many have tried making it at home but often fail; it's either too watery or too sour.
    且不说失败成功,单单是泡豆、打磨、煮豆浆、等待豆浆降温再冲入葡萄糖酸内脂这个繁琐的过程,就已经吓退了很多人。
    The complex process of soaking beans, grinding, boiling soy milk, cooling, and adding gluconolactone deters many people.
    我,曾经也是其中的一份子,但是架不住家里有两个爱喝豆腐脑的孩子,总不能每天开车跑很远去豆腐店去买吧?

    【10分钟豆腐脑】
    【10-Minute Tofu Pudding】
    食材 Ingredients:
    • 黄豆豆浆1000克
    1000g soy milk (pure, with only water and soybeans)
    • 葡萄糖酸内脂3克 (约3/4茶匙)
    3g (3/4tsp) gluconolactone
    制作过程 Instructions:
    1. 取一个大碗,放入3克葡萄糖酸内脂,倒入豆浆,用搅拌器搅拌均匀,不需要撇去浮沫。
    Take a large bowl, add 3g of gluconolactone, pour in soy milk, and mix evenly without skimming the foam.
    2. 覆保鲜膜,用牙签扎几个洞,放入锅中,大火烧开。
    Cover with plastic wrap, poke a few holes with a toothpick, place in a pot, and bring to a boil on high heat.
    3. 锅开后,计时10分钟,关火。
    After boiling, cook for 10 minutes, then turn off the heat.
    4. 打开保鲜膜,豆腐脑就做好了。
    Remove the plastic wrap, and the tofu pudding is ready.
    Tips:
    1. 豆浆尽量选成分主要是水和黄豆,没有其他添加物的纯豆浆。
    Choose pure soy milk with only water and soybeans, without any additives.
    2. 葡萄糖酸内酯是由植物来源发酵而成的天然食品酸,可以与豆浆中的蛋白质发生酸凝固作用,您可以在网上购买到。
    Gluconolactone is a natural food acid fermented from plant sources that can coagulate soy protein. You can buy it online.
    3. 你可以在亚洲超市或者豆腐店买到豆浆,尽快做成豆腐脑。豆腐脑的保质期稍微长一些。
    You can buy soy milk from Asian supermarkets or tofu shops and make tofu pudding as soon as possible. Tofu pudding has a slightly longer shelf life.
    【甜豆花 Sweet Tofu Flower】
    食材 Ingredients:
    • 豆腐脑适量 Tofu pudding as needed
    • 桂花适量 Osmanthus flowers as needed
    • 枫糖浆适量 Maple syrup as needed
    制作过程 Instructions:
    1. 豆腐脑盛入碗中,加入枫糖浆
    Spoon tofu pudding into a bowl and add maple syrup
    2. 撒上桂花
    Sprinkle with osmanthus flowers
    【咸卤汁豆腐脑 Savory Tofu Pudding with Sauce】
    食材 Ingredients:
    • 木耳5片 5 pieces of black fungus
    • 香菇10克 10g shiitake mushrooms
    • 干黄花菜8克 8g dried daylily
    • 芹菜15克 15g celery
    • 香菜2根 2 stalk of cilantro
    • 八角2克 2g star anise
    • 花椒1汤匙 1 tbsp Sichuan peppercorns
    • 生抽25克 25g light soy sauce
    • 老抽10克 10g dark soy sauce
    • 盐适量 Salt to taste
    • 白胡椒粉1/2茶匙 1/2 tsp white pepper powder
    • 蘑菇粉1茶匙 1 tsp mushroom powder
    • 淀粉2汤匙 2 tbsp starch
    • 麻油1茶匙(随意) 1 tsp sesame oil (optional)
    • 油泼辣椒1茶匙(随意) 1 tsp chili oil (optional)
    制作过程 Instructions:
    1. 香菇洗净,提前泡发,香菇水留着备用;木耳、黄花菜泡发
    Clean shiitake mushrooms, soak them in advance, and reserve the soaking water; soak black fungus and daylily.
    2. 香菇切片,泡发的木耳去掉根部,撕成小片,黄花菜切三段,芹菜杆、香菜切碎备用
    Slice shiitake mushrooms, remove roots from black fungus, tear into small pieces, cut daylily into three sections, and chop celery and cilantro.
    3. 热锅不加油,放入芹菜末稍微翻炒,加入香菇、木耳、黄花菜,倒入水加香菇水共1000毫升,八角和花椒装入调味盒,放入锅中煮开
    Heat a dry pan, add celery, and stir-fry briefly. Add shiitake mushrooms, black fungus, and daylily, then add water and reserved mushroom soaking water to make 1500ml. Place star anise and Sichuan peppercorns in a spice bag and add to the pot. Bring to a boil.
    4. 锅开后加生抽、老抽、白胡椒、香菇粉,再根据咸度添加适量的盐,煮2-3分钟
    After boiling, add light soy sauce, dark soy sauce, white pepper, and mushroom powder. Adjust salt to taste and cook for 2-3 minutes.
    5. 调麻酱汁:取3勺麻酱,取锅中煮开的汤汁,边搅拌边加汤汁,顺着一个方向搅,搅成糊状,中间可适量添加盐
    Prepare sesame sauce: Take 3 spoons of sesame paste, add boiling soup from the pot while stirring in one direction until smooth. Add salt as needed.
    6. 把淀粉和水按1:1调成水淀粉,倒入锅中,一边到一边搅,达到自己喜欢的浓度即可,不用全倒入,关火
    Mix starch and water in a 1:1 ratio to make a slurry, add to the pot while stirring to the desired consistency. Turn off the heat.
    7. 把凝固好的豆腐脑盛入碗中,舀几勺卤汁,浇上一勺麻酱,撒点香菜,还可以按照自己喜好,滴几滴香油或者辣椒油
    Spoon the set tofu pudding into a bowl, add a few spoons of the savory sauce, top with a spoon of sesame sauce, sprinkle with cilantro, and add a few drops of sesame oil or chili oil if desired.
    Tips:
    如果买的麻酱已经结块,搅拌是一件又费力又费时的事,这时候有一个简单的办法,就是把整瓶麻酱块和里面沉淀出的油一起倒入破壁机/料理机,只需要20秒就变成均匀细滑的麻酱了
    If the sesame paste you bought has clumped, blending it can be tedious. A simple solution is to pour the entire jar of sesame paste and its oil into a blender. Blend for 20 seconds to get a smooth consistency.
