Takes some practice, but basically use short boosts instead of full boosts, and hold right trigger to stabilize the Scramjet to keep it from spinning uncontrollably, you'll eventually get pretty decent at it. Also make good use of the "full stop" technique by selecting Trevor/Michael/Franklin in the character wheel to make the alert message pop up, that will keep you from flying/falling into unwanted areas or water.
