- Mary Rose Livingston, farmer owner of Northland Sheep Dairy, talks about her cheesemaking. This is one clip in a series of videos demonstrating how Northland Sheep Dairy in Marathon, NY raises 100 grass-fed dairy sheep and makes artisanal cheeses. This clip is from the Video Mentor series, produced by the Cornell Small Farms Program (nebeginningfarmers.org), filmed and edited by Peter Carroll of Ithaca, NY. This project was supported by the Beginning Farmer and Rancher Development Program (BFRDP) of the National Institute of Food and Agriculture, USDA, Grant # 2009-49400-05878.
I would love to sit and enjoy some of these cheeses one day. The milk was shown great respect, each curd was touched and cared for, each cheese was watched over and tended. When someone puts that much care and effort into their product, when they speak with such reverence about their ingredients, when they have poured that much love into their craft then I think the finished product must be perfectly wonderful. I wish Mary Rose Livingston great success and can not wait to taste her beautiful cheeses.

I appreciate how much effort it is. I make cheese too. And I feed and milk the cow. I use raw Jersey milk. I make excellent cheddar.

I'm looking into dairy animals other then cows and sheep seem weird but... well, I kinda am weird LOL so it fits with all the particulars of what I need so well seems like the right choice. So I have a few questions since I've not had sheep (had goats). It doesn't seem like you need to separate the cream out in sheep milk, is that so and could I still make whipped cream anyway? How often do you need to freshen with a sheep? Thanks for your help!

I with u, I no longer use animal rennet, once I really started looking into what rennet was, and what it does, I just couldn't in good faith, use animal rennet, and enjoy making cheese.

milk heaters? like as in the burner she used? if so you can find those at wallmart or online as part of a "turkey frier"

no, everyone who watches these vids say "where are your gloves?" I work in a creamery, I would go into why we are gloveless, but I don't feel like it.
She is not making industrial pasteurized embalmed with preservatives dead cheese. She is making European style cheeses which are living things, full of bacteria and yeasts, very able to take care of themselves. They are always made with clean bare hands and a simple ring does not interfere. In fact the microbes and bacteria present on the hands are needed during the process. In Europe, where we have more than 800 kinds of cheese, the aficionados would look with distaste a cheese maker with rubber gloves, the stigma of the industrial dead cheeses ready to rot like a road kill. We are not afraid of microbes as we use them for making cheese. A cheese full of the good microbes does not rot, it matures.
The Americans have much better hygiene standard than any filthy Muslim country you can name in. don't forget. you don't feet on their shoes. dig some facts before vomiting your hates.
