  • Tomato Ohitashi is an easy Japanese side dish. Peeled tomatoes are marinated in a mixture of dashi stock and soy sauce to absorb the umami flavor. It is a light and refreshing dish and it’s perfect for warmer seasons.

    INGREDIENTS:
    15 cherry tomatoes
    1 1/4 cups of dashi
    2 tbsp. of mirin
    2 tbsp. of light color soy sauce
    A pinch of salt
    Bonito flakes (for garnish - optional)

      It is dashi. It's like chicken/beef/vegetable broth in US. There are several kinds of dashi depending on the ingredients used. Tried out this recipe. It's simple and delicious!!
