    WELCOME to our CZcams channel at Kowalski Mountain!
    Philip dreamed of a place where he could build a self-sufficient life. A little piece of land where he could hunt, work the land, and build a home that he could be proud of. His dream began to become a reality when he purchased the first 40 acres of Kowalski Mountain in 2016.
    I met Philip online in 2018. I grew up on a small, hobby farm. While I loved the outdoor lifestyle, I was stuck in my urban life far from my roots and the lifestyle I loved.
    It's hard to deny that Philip and I were meant for each other. We make a great team! We seem to be able to accomplish more than the average couple in record time. Since our Kentucky dream is built in short workcations, our ability to get things done is a huge asset.

    Great video. As to getting your canned pumpkin off the shelf without feeding it to the chickens, you should try making it all into puree and then dehydrate it. The few recipes I make that call for pumpkin puree, never call for an entire can so I buy a large can (usually 2 knowing I will be dehydrating) then dehydrate what I don't use. It reconstitutes very easily and I can reconstitute only what I need.

    I have learned so much and love home canned meats and broths. For years all I canned was green beans. cucumbers and jams. All I have learned from you tube people has really made canning so much fun.

    I liked hearing about the soup and chili. Great idea make more and save some in your bottles for later. My favorite is the canned meat too.

    Another one you may like if done differently is the raw soup. Mix all in and then put in the jar and add broth. So if you fill jar 3/4 of food and the rest the way of broth and add 1/2 tsp of salt and it makes it so much better.

      We usually still eat them. One year we didn’t like the variety of green beans we grew. I had done over 60 pints…. We’re still eating them, seem to be never ending!

    The soups being cooked first is a great idea. I assumed it would disintegrate in the. Canner. Will be doing this!

    Ketchup is a tricky thing. I have tried many recipes, usually the clove taste is to strong. I ended up with a Mrs. Wages mix and it was the best recipe so far. Everyone liked it. Thank you for the video.

    Wonderful video. You have given me so many ideas. I keep my bag in the freezer for my scraps. It keeps me in a pantry full of broth and it did not cost me very litte.

    On the topic of marmalades and jams, I love having orange or lemon or kumquat or mandarin or grapefruit marmalade on the shelf. Add to that me apricot jam or my apple butter, and in addition to putting them on toast or biscuits, is to cook with them. If I am braising fish or chicken, or pork chops or pork tenderloin, topping them with a jam or marmalade creates a very tasty main course. Generally, the liquid I use to braise is beer or white wine or maybe some champagne that went flat rather than water. What a great way to use my jam or marmalade!

    I have done pears that stayed firm and have had some go mushy. The pears I picked myself were awesome. Lots of great information I will use in this video. Will watch for video on beans. I have canned some but not happy with some. Thanks for a great video! Off to find Canuary!

    I did the food mill applesauce once and I felt the same way. It was like baby food. I LOVE canned chicken too! It's so good and nothing like canned chicken you buy from the store (which reminds me of tuna). Thanks for the video. it was interesting to hear what you liked and didn't like.

    I’ve been searching for other Canuary collabs and the only one popping up in my search was Leisa’s. I’m watching that one, but I love watching canning videos so I’m glad you showed up in my feed today. Last year I overused a stick blender in one of my applesauce batches, I did not know applesauce could get so fine. 😂.The texture was off putting at first, but when it’s chilled I don’t mind it. The apples I used were from Azure and were just labeled juicing apples. They were all the same, but I have no idea what variety they were. I wish I did, because the flavor of the applesauce is amazing!

      Her collab is a big one. I only learned of it when I organized my collab. A lot of creators put out individual videos as well. Denali canning is also celebrating Canuary. It seems we are not alone regarding fine applesauce! So glad you found us!

    Thanks for sharing! I believe the raw pack soup you said you didn't like is also a rebel canning method because you filled the jars all the way full with solids. The recommendation from the National Center for Home Food Preservation for canning soups says to fill the jars only HALFWAY with solids (veg and meat) and the rest of the way with broth or water. I learned this the hardway- when I overfilled the solids in my jars of soup I had a lot of siphoning and seal failures in the canner versus doing it the recommended way.

    Pumpkin is great roasted on a sheet pan (with parchment) brushed with ghee and seasoned. Good way to use what you canned that isn't sweet. It's also lower carbs than sweet potatoes and doesnt have all the oxalates. Meatloaf is not a tested/approved recipe but I have done it in wide mouth pints and it came out good. They pretty much quit testing recipes about 30y ago and yet they somehow update what they deem are safe canning times. Soups I cook I try to take out what we plan to eat before it is completely cooked and can the rest to avoid overcooked veggies. Everything is trial and error.

    Try putting some of that fine textured applesauce in bbq sauce. We love it that way! But for regular applesauce, we prefer chunk too, so I freeze it.

    Just watched your video and I agree with everything that you stated! I started canning in October and am still trying to figure out what I need for long term storage and planning when “starting “ out. I am also getting ready to can beans of various kinds as it is much less and can always cook over a fire if necessary. What I would really like to see is not only canning videos but then what to do with the end product once it is canned. What to do with it if the grid goes down and we are now using our fire pits. The what’s next videos doesn’t seem to be plentiful once you have canned or dehydrated something.

    Salsa, broth, and canned chicken are a couple of our pantry favorites too.
    Very interested in your canning baked beans and spiced apples.
    I too want to try canning enchilada sauce. We use a lot. I am also in the provess of canning beans as we use lots of those too.
    I make marmalades. My kids and grandkids love them.

    Tank you for sharing your likes and dislikes. I can relate to a lot of the things you posted. I canned meatloaf not realizing it was a rebel canning project. My dog enjoyed it.. LOL. However I canned pureed pumpkin pie filling and made a great pumpkin cheese cake, cookies and bread.. My granddaughter ate her jar with a spoon.. I love canning and it is always fun to see what other's can and share recipes.

    I am new to your channel. Thank you for sharing the good and bad of canning foods. I agree with you on the pumpkin, it takes so much more. You should definately do the beans and the ketchup. We use those two alot. Happy Canning!

    Definitely do the marmalade and the beans! I do both of these and if I can do it, anybody can lol. In regards to the Rob pack soups I wonder if maybe you could use them with your Dutch oven and turn it into a beef stew? Also, what kind of canning times do you use on the already prepared suits?I think I’m going to be with you on this one. Thanks for a great video! On a final note, you can add your jams and jellies to your oatmeal! You can have tons of different varieties of flavors and you won’t get tired of it ha ha

      Lots of great ideas! Anytime you pressure can something go with the highest canning time, anything containing meats would follow the guidelines for meats. 75 minutes for pints, 90 minutes for quarts is typical. I can’t wait to do marmalade!

    Everything you said about pumpkin is true. However, it is one of my always have it on the shelf canned goods. I don't have freezer space. I feed the pumpkin chunks to the dog. I love all things Pumpkin Spice and am not willing to pay for commercially canned pumpkin. I've trained myself to open the jar a day ahead of baking day, blend it, then let it sit in a filter lined colander in the fridge overnight. My pumpkin bread recipe includes water. I substitute the liquid I drained off.

As a new canner I'm relieved that things may not go as expected but don't give up. Last Canuary we made your Salisbury steaks & it is our favorite now.       Both yellow squash and zucchini can very easily take on fruit flavors! One of my favorite things to can is pineapple zucchini!! Chunked or crushed is fabulous!!

    like you, I don't particularly care for canned pumpkin. It's really healthy for dogs and for chickens though...and they love them!!! I also like some texture in my applesauce.

    Awesome video! Canned corn was the only way I used to eat it besides off the cob, however, my grandma always made it as creamed corn. Homemade salsa goes like candy around here too!

    When you do la A large batch a vegetable soup do you have to process it the 75 minutes for pints. Do you have video on canning soup?

      I don’t have a soup canning video yet. I’ve never canned vegetable soup. If it has meat in it, I’d do 75 minutes for pints. For just vegetables no meat broth, I’d look at the vegetables individually and process for the longest processing time.
