Hi, Dataset preparation should be straightforward as all Yolo models use txt format for annotations. I have discussed about Groundtruth and targets preparation in YoloV1 video in detail. You can also have a look at blog.roboflow.com/how-to-train-yolov5-on-a-custom-dataset/ for creating groundtruths txt files for your dataset. Hope it helps!
Check YoloV3 video for theory about anchor assignment and creating target vectors. Look into github.com/AntonMu/TrainYourOwnYOLO/tree/master for python implementation of yolov3.
Please continue with Yolov5 because its the most commonly used
