Their DNA has nothing to do with the cheese though. Makes for a good title, but it is their personal bacteria ecosystem on their skin that he used. This is also quite different from individual to indivudal but has nothing todo with their DNA. There DNA is of course on the swap as well as he will have swapped dead skin cells and stuff, but these cells do not reproduce even if he managed to get a few live ones in milk and transform it to cheese.
As a biology nerd I would have loved to hear more of the cheese talk. The cheese making guy seemed to be quite an interesting presenter of cheese facts.
