Season 1 Episode 3: When Shawn and Gus crash a wedding in an attempt to retrieve an antique wedding ring stolen from a secure vault, they discover that it is not only a theft that they're investigating.
This one is one of my favorites. It basically sets up the great lengths Shawn will go to to relentlessly taunting Lassie for the entire series when he takes over his hotel room to work on his investigation and hold the bachelor party. I also think that the character nuances really started to take hold.
I also like how there are still sound effects in the episode, specifically when Lassie thinks he spots Shawn at the beginning at the De La Cruz.
Side note, this is the same hotel Shules goes on a vacation later on in the series.
