Lots of reptiles in very windy areas (such as Hawaii) have webbed hands designed to hold on to trees as opposed to their non windy area counterparts with individual fingers intact we have measured this evolution in Hawaii which is why it’s the example I gave this is a prime example of evolution.

Basically traits in the DNA of individual beings are slightly altered after their reproduction and the organisms that have the traits best suited for survival in their environment will survive and reproduce passing down those traits. Currently though for humans, the changes he describes wouldnt happen because we are the dominant species on the planet and we have "escaped" natural selection meaning non dangerous traits like wiggling ears wont disappear.
