Instead, it’s a melt-in-your-mouth tender, schmaltzy, slow-roast version that’s more similar to rotisserie chicken-except (bonus!) it gets slathered in the funky-spicy-sweet gochujang. And while the meat might be the star of the show, don't discount those buttery-soft, nearly-confited potatoes, which cook gently in the chicken fat. It's faster her way actually. Dumping potatoes and then moving a few out of the way vs delicately pouring around a chicken evenly.

Sarah May Woodruff everyone should, really, in my opinion they're all slightly off and even being new or being old makes them vary so much. I have a new oven and it seems way hotter than it says it is, my old one was cold because the door was falling off XD so I have to get used to so much variation.
I always just stick my hand inside and see if it feels right. It's not as accurate as it could be but I've just been futzing with cooking so long it's kinda a feeling?

Definitely get an over thermometer. Even the really good ones calibration isn't all that close.
But for roasting meat what you need is an probe or instant read thermometer. I use a probe that stays in the meat the whole time and reports to a base unit that stick to the oven with a magnet. I set the target temp and wait for the alarm.
Or you can get an instant read, like a thermo pen, and just stab the meat when you're close to being done.
Yummy base!!! For anyone bored to death who wanna try this, try upgrading the gochujang "bbq" paste by adding a bit of soy sauce, honey, lemon juice and chili pepper---adjust to your liking! And stuff the chick with your squeezed lemon halves (used in paste and potatoes) with the garlic. Yummm!
Yeah, adding in just the lemon juice alone brightens the sauce quite a bit. Though I suppose her plan of squeezing on the lemon juice after it cooked works equally well.

I made this today, and no joke. It was amazing! The only thing is that I put the chicken breast side up for 30 min. Then flipped it over for the remaining 1.5 hrs at 180 Celsius.

I made this last year when it was posted to Basically and it’s delicious. If you’re fortunate enough to have a grocery store that panic buying hasn’t ransacked I highly recommend getting a chicken and trying it out.

They probably have lots of content for coming weeks/months but since they are not filming now in test kitchen, at some point in several weeks/few months(?) there could well be less content?? (Plus they wont be any trips abroad for awhile)
The test kitchen closed down in Feb for maintenance. I'm not sure if it ever opened back up again. (Found this out through Hunzi's twitter account)

So Gochujang isn't very oil soluble. I have made this quite a few times and I've found that adding a little water to the gochujang helps incorporate it into the oil.

and the times after that, there are cuts in the video edits between her touching the chicken directly and touching other items, obviously they cut her washing her hands because we don't need to see it 20 times to know common sense.
