I am georgian and to my understanding they eat a lot of meat. It's true though that they make brilliant use of plant based foods, and very healthy ones like walnuts, unique greens/herbs, pomegranate, spices. I suspect, though, that these side dishes would disappoint a table of hungry georgians if not for the meat that they're served alongside.

I'm not georgian, but a quick look on the internet shows that it might be a mushroom kubdari. When it's braided, it's called a pastry. It looks like a closed pide, but it's too short for that. Might be mkhlovani - where the braiding's a specialty by the baker themselves. The best I could find for braiding is challah, and this isn't that.
Sadly restaurant food is usually drowning in oil. Are there some that serve WFPB options or can you ask them to not use olive oil etc.? Interesting and delicious looking meals nevertheless. Feeling inspired to try out new things in my kitchen. Will visit Georgia this year and go to some restaurants myself.

I do like the grade system here! Also the creativity of combination too! That's what I do at the end of my meal to avoid food waste.

Georgian culinary tradition most likely is the most Vegan - vegetarian in this part of the World. And very very versatile and tasty!
