Carrot Cake Bunny Shaped Cake Pops

Recipe:
Makes 9 cake pops, 80g (2.8oz) each
For Carrot Cake:
95g (3.3oz) grated carrot
1 large egg
110g (3.8oz) light brown sugar
90g (3.1oz) coconut oil (or any vegetable oil)
75g (2.6oz) walnuts
105g (3.7oz) all-purpose flour
2g (0.07oz) baking soda
3g (0.1oz) baking powder
1g (0.03oz) sea salt
2g (0.07oz) ground cinnamon
1g (0.03oz) ground nutmeg
Zest of 1 lime (or a half of lemon)
12g (0.4oz) juice of lime (or lemon)
For Cream Cheese Frosting:
100g (3.5oz) cream cheese
50g (1.7oz) butter, softened
50g (1.7oz) icing sugar
1/2 teaspoon of pure vanilla extract
For Chocolate Coating:
300g (10.5oz) white chocolate
40g (1.4oz) coconut oil
Little extra:
Bunny shaped cookie cutter
Paddle Pop sticks
Food colours
Sugar sprinkles
