There are 3 levels of carvings:
Beginners Level - you will learn how to apply quick and simple design to the different fruit and vegetable.
Intermediate Level - you will progress onto more detailed carving design for larger display
Advanced Level - How to carve Rose flower and more flowers. After you master all these flowers - you can apply to larger Fruit and Vegetable such as Watermelon and Pumpkins.

The best food art I have ever seen was in Penang Malaysia. A friend and I were at a function at an expensive hotel for dinner, and all the vegetables were cut in such a way that we had peacocks of carrot, roses from tomatoes, palm trees from lettuce, and many more. The waiters came and took the peacock carrots before we could eat them, saying they were only decoration, and were needed for others. :)

Thank you for saying only cut about one centimetre at the top and rotate the fruit towards the knife. Other fruits carvers say stuff like "Do what I do". But you describe what you are doing so well! Keep up the good work!
The knife I am using in this video is called "bird beak knife" you can buy it at any knife shop or catering supplies.
I will upload my carving techniques / tips next week. You will see what type of knives I am using.

Re: carving knives. You will need two types of knives - the wider blade similar to the one I am using in the videos, you can find in a good knife shop (some people call it a paring knife). The small blade carving knife which we are going to use for more detailed carving on watermelon and rose flowers etc in future videos, I will try to provide if I can or find out where you can purchase them. yes, if the skin is thick - grapefruit is bigger than orange - try divide it into 16 sections then follow the same steps as the orange.

- practice on carving techniques / tips lessons using a small kitchen knife if you don't have a bird's beak knife
- then try carving the orange flower.
