Miso Nikomi Udon Recipe (Udon Noodles, Meat, and Vegetables Simmered in a Delicious Miso Broth) ćłćç źèŸŒăżăă©ă 甊éŁăŹă·ă
Difficulty: Easy
Time: 20 min
Number of servings: 2~4
Ingredients:
400g (14oz.) 2 packages of boiled or frozen Udon noodles
200g (7oz.) thinly sliced pork
150g (5.2oz.) Daikon radish
100g (3.5oz.) Konnyaku (yam cake)
100g (3.5oz.) long onion
100g (3.5oz.) carrot
100g (3.5oz.) Komatsuna (Japanese spinach)
800ml Dashi broth
4 tbsp. Miso
cooking oil
Directions:
1. Cut pork into an inch long pieces.
2. Cut Komatsuna (Japanese spinach) into an inch long pieces.
3. Slice Daikon radish, Konnyaku (yam cake), long onions, and carrot into small pieces.
4. Heat cooking oil in a pot. Cook meat and vegetables, then add Dashi soup stock (you can use Dashi powder). When the vegetables become soft, add Miso by diluting it with the cooking liquid.
5. Add Udon noodles (microwave if frozen), and simmer in the Miso soup.
