- A saffron infused sweet rice dish made for special occasions. Sprinkled with nuts and dried fruits. A royal dessert indeed.
ZARDA PULAO
Ingredients
A large pinch of saffron
2 cups Basmati rice, washed, soaked for 30 minutes and drained
¼ cup ghee
2-4 green cardamoms
1 inch cinnamon stick
10-12 cashew nuts
2 tbsps raisins
1½ cups sugar
½ tsp green cardamom powder
Blanched, peeled and slivered pistachios for garnish
Silver warq for garnish
Method
1. Heat ghee in a handi. Add green cardamoms, cinnamon stick and sauté till fragrant.
2. Add cashew nuts and mix well. Cook till light golden. Add raisins, mix and cook till they puff up.
3. Add the soaked Basmati rice and mix with light hand. Add saffron and mix.
4. Pour 3¾ cups water, mix and cook till the mixture comes to a boil and cook for 8-10 minutes. Add sugar and mix with light hand till well combined.
5. Add green cardamom powder and mix.
6. Reduce the heat to low, cover the handi with a lid and continue to cook for 8-10 minutes or till the rice is cooked completely. Switch the heat off and allow the mixture to rest for 5-10 minutes.
7. Transfer into a serving bowl, garnish with blanched pistachios, and silver warq.

Little correction -
Akbar was illiterate.
His biography(Akbarnama) is written by Abul Fazal. The 3rd part of that book is Called Ain-i-Akbari.
Mugals are from Mongolia actually they are Mongolians which through various people pronouncing in their dialect became mughals so as such there is no one such as mughals but actually they are mongolians.mongolia falls between borders of China and russia.the Mongols are very poor and there is scarce vegetation so their diet is mostly to do with flesh and dairy products as they have no much of rice and wheat.whereas Persia falls in Iran which comes under Arab rule and Afghanistan comes under Asian rule.
Zarda is an Indian cuisine and not a mughals,or Persian or Afghanistan.

Yes whatever mughlai food that is created is actually copied from Iran and Afghanistan the mughals as such do not have a rich food culture and that's because of scarcity of food grains and pulses.
BTW Mughals kahi chale nahi gaye.
