Watermelon Macarons - Swiss method

- Watermelon Macarons made using the Swiss method. The perfect summer macarons! Make three different colors from the same batch!

And two options of filling: Watermelon Buttercream, and Watermelon Ganache.
Macaron Shells
100 grams egg whites 3.5 oz
100 grams granulated sugar 3.5 oz
105 grams almond flour 3.7 oz
105 grams powdered sugar 3.7 oz
Food coloring I used green, and watermelon food coloring
Watermelon White Chocolate Ganache
100 grams good quality white chocolate 3.5 oz
35 ml heavy cream (2 tbsp plus 1 tsp)
1 to 2 tsp watermelon syrup
Watermelon Buttercream
1 1/2 cups confectioners’ sugar sifted 187.5 grams, 6.6 oz
4 tbsp unsalted butter softened 56 grams, 2 oz
1-2 tsp watermelon syrup
1/2 -1 tbsp milk or water only if necessary

You are amazing!!! I love all your recipes. Is there a reason you are using American buttercream as opposed to Swiss? I find the American buttercream too sweet. :(
I do like american buttercream, and it's also easier to make. but this will also work with swiss, just add the syrup to the buttercream at the end :)

I love this and I want to try this flavor! Is there another way to add the watermelon flavor? Perhaps a watermelon oil or candy? Also last night I tried your Chocolate Biscoff Cupcakes and they were delicious!
thank you so much!! So I havent tried making this with anything else besides the syrup, I have never saw watermelon oil, and about the candy, I am not sure how to incorporate it into the frosting.
This looks really good. I live watermelons, but I have never seen watermelon syrup. Does the watermelon syrup actually taste like real watermelon? Or does it just taste more like watermelon flavoured candies? I have seen freeze dried watermelon powder, but I've never tried it... has anyone tried that? Does that actually taste like watermelons? I believe some people do that. I havent experimented with it, but it's worth a try if you are willing.
