I like to use a spicy tuna filling with a sprinkle of tempura crumbs for a little crunch. I then have a layer of avocado on the outside of the roll before spreading the seafood bake on top. I put the seafood bake on some foil and broil it on its own so that the rest of the roll stays nice and cool. It’s a great contrast of favor having the cool crunch of the roll and then the warm seafood bake. I also add a little eel sauce to the seafood bake. SushiDaddy, your videos inspire me!
