Most of the vegetables that you mention not found in India are actually not found in western and northern India but are easily available in east, northeast and south India. Actually west and north India is dry and arid so very few vegetables and fruits naturally grow there, but east, northeast and south India is humid, moist and green. Different varieties of vegetables and fruits are part of the diet here.
Yes it is true but in Himachal Pradesh water spinach also found near river sides or farms we called it as chooch/ chuyi ka saag. Water spinach is very common here as it can grow anywhere near the water ,we have it in our backyard.

There is very availability of water spinach in west bengal, and it's called "kolmi saak" here..we cooked it with a tarka of sukhi mirch, little amount of chopped garlic and kalonji ... your husband cooks like a pro..
