Pig Pickin' Cake! The Perfect Summer Dessert!

    Hey y'all! What?? You've never heard of a pig pickin cake?? Well, don't worry... I'll explain where the name comes from in the video. Even if you didn't know why it's called that, you NEED to make this! It's the perfect summer cake and I know you'll love it!

    PIG PICKIN CAKE:
    1 box yellow cake mix
    1 can (15oz) mandarin oranges, drained (save 1/2 cup juice)
    1 stick butter, softened
    1/2 cup mandarin juice
    4 eggs
    1 tsp vanilla
    For the Frosting:
    1 can (20oz) crushed pineapple, drained (save 3/4 cup juice)
    3/4 cup pineapple juice
    1 box (3/4 oz) instant vanilla pudding
    1/2 cup powdered sugar
    4 oz cool whip
    Preheat oven to 350F. To a mixing bowl, add the cake mix, mandarin orange juice, butter, eggs and vanilla. Mix until well combined. Fold in the drained oranges. Bake for 25-30 minutes or until a toothpick comes out clean. Let the cake cool completely. Once the cake is cooled, make the topping. In a bowl, add the pineapple juice and pudding mix and mix well. Add in the powdered sugar and stir to combine. Fold in the cool whip. Add the drained, crushed pineapple and fold in. Spread the icing on the cake. Garnish with extra mandarin oranges if you want. Store covered in the fridge.

    Right up my alley. Looks refreshing and delicious with that creamy frosting with pineapple.
    Guess what I did the day b4 yesterday ! I was in the mood for a cake, so I put all my ingredients in and it called for the juice of 1 orange. ( I’ve been sick with a cold ) I thought it said 1 cup!!!! Omg you can imagine. Being sick and baking don’t mix!! I tried to improvise and add more flour. It did not turn out good lol That was a waste, lesson learned. Don’t bake when your not feeling well 😱😅
