Mutton Biryani | Lucknow famous Idris Restaurant Style Mutton Dam Biryani |

Ingredients:-
FOR YAKHNI:-
1 KG MUTTON
1 TSP RED CHILI POWDER
1 1/2 TSP SALT
2 TBSP GINGER GARLIC PASTE
2 TBSP FENNEL SEEDS
1 TSP BLACK PEPPER CORN
1 MACE
6 GREEN CARDAMOM
1/3 NUTMEG
4-5 CLOVES
1 BLACK CARDAMOM
3 MEDIUM SIZE FRIED ONION
INGREDIENTS FOR MILK:-
3 cups of milk (600 ml full fat milk )
1 tsp rose water
1 tsp kewra water
1 pinch saffron
1/2 tsp sugar
1/3 tsp nutmeg powder
1/3 tsp mace powder
1 tbsp fennel powder
1 tsp cumin powder
1/2 tsp green cardamom powder
1/2 quantity of fried onion
1/2 quantity of ghee
FOR RICE:-
3 Cups of rice( 600 gram )
1 tbsp oil
3 tbsp salt
1 bay leaf
4 green cardamom
4-5 cloves
1 black cardamom
2 inch cinnamon stick
150 ml of ghee or oil (3/4 cup ) [ total ghee ]
For Biryani layering:-
1 tsp kewra water
1/2 quantity of ghee
food colour
1/2 quantity of fried onion

The first time I went to Karachi, the Biriyani was amazing. (over 30 years ago) What I miss most is the unique aroma. Been back many times to different parts of Pakistan, the food has always been awesome. I'm from India but live in the UK now. Everytime I watch your recipes, it gives me the urge to start cooking. My wife is very happy when I cook !!!!!! 😬

Used this recipe 7-8 times in last 5-6 years. It takes about 3 hours to cook but the end result is worth the effort. ❤
