Lemom Cream Sandwich Cookie

Lemon 🍋 Cream Sandwich Cookies 🤌they are so good! So much Lemons flavor and a beautiful tender cookie with amazing lemon cream cheese filling. It's a win-win -win. Any lemon lover in your life will be so happy to have these delightful little cookies. They are so cute when piped into these little carnation looking cookies, but you can just scoop and press out these cookies as well. There are many options for these ☺️
Cookie:
1 cup sugar
1 tablespoon lemon Zest
3 ounces cream cheese
8 ounces butter
1 egg yolk
2 tablespoon lemon juice, I started with 1 tablespoon but ended up adding another tablespoon
1/2 teaspoon vanilla
2 2/3 cup flour
Filling:
1/2 cup butter
1/4 cup cream cheese
1/3 teaspoon vanilla
1 tablespoon lemon juice
1 teaspoon lemon Zest
2 cups powdered sugar, roughly
