SWEET & SOUR PORK EXACTLY LIKE TAKEOUT

- Ingredients:
Pork marinade
300G Pork Shoulder
1/4 tsp Five spice powder
Pinch Salt
1/4 tsp White pepper
1 tsp Chicken powder
1/4 tsp Baking soda
1/2 tbs Cooking wine
1/2 tbs Sesame oil
Batter
1/2 cup Self raising
1/2 cup corn starch
3/4 cup soda water
Sauce
1/2tbs Ketchup
1tbs Pineapple syrup
1tbs Sugar
1tbs Water
1/2 tbs vinegar
Pinch red powder
Pinch salt
1/4 tsp worcestershire sauce (gives the dish a tangy, sweet umami flavour)
Vegetables
8 pieces pineapple
half onion sliced
1/4 Red and Green Capsicum sliced
half carrot sliced
Method:
1. Marinade pork with all above ingredients and leave aside.
2. Combine all ingredients in "batter"
3. Add tablespoon of corn starch to pork then mix with batter
4. Fry at 180degrees C for 5-10mins or until gold brown
5. Once golden, fry vegetables for 30secs and put aside
6. Combine all ingredients in "Sauce" over low heat on a wok and bring to a simmer.
7. add potato starch slurry to thicken sauce
8. Toss Crispy pork in sauce and serve!
I hope you enjoy this recipe. I have served this in my restaurant for over 6 years and at my dad's restaurant for over 10 years.
The measurements aren't 100% exact as we create large batches of this sauce but tweak it to be sweeter or more sour as you please.

I absolutely love the fact you tossed it in potato starch!!!! It seals the flavor like a vacuum, keeping the meat tender inside and crispy outside even if it's been sitting. That's where the food magic happened!!!!! Excellent work 😎
The potato starch is used to thicken the sauce. Otherwise, the entire dish would be watery like soup. It has nothing to do with keeping the meat tender. BTW, let the dish sit for maybe 10 minutes and the fried pork will get mushy, potato starch or no potato starch.

When i was a child this was my favorite dish, on my birthday my mum would always try her hardest to make it.

@@SimplyChingo if you just check traditional sweet and sour pork in real Cantonese cookbooks , its in there, as there are other versions in China, and Chinese ppl do not eat Mongolio Beef, bc its actually a riff of Beijing and Szechuan dried fried beef that has adopted a new name and made to be more palatable to American palates (Cantonized). Its still Chinese though. Don't speak on subjects you know nothing about. And the Pad Thai that is eaten by everyone was invented by Cantonese emigrants to Thailand. We are everywhere.
@@brucelee5576 It's effectively the same sauce. Sugar, Vinegar, water, starch, and some extra umami. It's sweet and sour. How it's interpreted by Chinese all over the world is up to each cook. The balance and profile is exactly the same. Hong Kong has it's own interpretation. The Cantonese that migrated all over the world, prior to the 1960s...was not from Hong Kong, but in the region of Sze Yup.

I bought a wok burner, and its a game changer. Cant get the restaurant results without it.
I made this once and it turn out quite good. Then one of my friend suggested I use beer batter. Each piece of pork expanded 2x its size so at the end the dish is piled up like a mountain and it took 2 rounds to coat the fried pieces with sauce.

I made a version of this but used lean pork loin, air fried it without batter and stir fried the veggies rather than deep frying.. not near as good as if i followed the method but I Made enough for 5 days of meal prep.. store version is a treat but too caloric for my daily diet.. that sauce is sooo good
