I've had someone try to attack me first while I was mounted in an elite polar bear lol. I just popped ability froze him and killed him in like 6 seconds

Everytime someone damages you, your mount disappears because you're in pvp

You have to start gathering the resource again. That fixes it. don't need to finish it just click on it for half a second
