I made a big pot of soup last night using all vegetables from the garden. Half a cabbage, 28oz blended tomatoes, a huge zucchini blended, some sweet and mild peppers, kale, Swiss Chard, carrots, onion, basil and parsley. Oh and beef broth and sausage. It was great, reminded me of Pho.
Success! We had pasta with YOUR homemade sauce recipe for dinner. Our garden provided beautiful and some "beat up heirloom" tomatoes, onion, peppers, and even the basil. Wow, I’m intrigued that you didn’t remove the skins and the seeds, which I always thought was necessary. Thank you for sharing this. I learned so much.
Good job Gary! It seemed like the heat and drought here in Ohio brought all my heirloom tomatoes into the house at one time. I just did a batch of sauce like this over the weekend. My grandmother used to have a saying: "waste not, want not", and that's what this does. You can freeze the soup and sauce in containers for at least 6 months, so use all the tomatoes, blemished or not. I did save a couple of nice slicers for BLT's!! Maybe later you could do an "end of season" chutney or chow-chow recipe. Use it all!
I LOVE making a great garden sauce. I will often freeze (or can) the reduced sauce without any seasoning - and then will "spice it up" when I use for future meals. Can't beat the addition of fresh herbs but I also dehydrate my own herbs throughout the summer - to use in the winter months. Way better than store bought. NOW - I am so hungry for it. Thanks Gary!
Love this simple tutorial on making tomato soup and pasta sauce!! I have "too many tomatoes," as you mentioned, and will use this as a guide to use them and then hopefully can some sauce!
Thank you so much for this video. I know you said cooking videos are a lot of trouble to make but it’s wonderful to not only learn to grow vegetables but also just how to cook with them. I’ve had a lot of tomatoes that look pretty bad too and I was cutting the bad part off and putting them in the freezer. I was hoping that I was doing the right thing so I feel confident now in my decision. Your sauce and soup look so delicious!! Thanks again!!
Gary, I do the same except I use a big roaster, set it to 200 degrees, dump all the tomatoes in (I usually fill it full) and let it cook. If I have used a lot of slicers that release a lot of water, then I skim the water off the top periodically. Takes 3-4 hours, then I blend everything together in a big pot and pressure can the sauce. It is so good come wintertime!!

Looks great. I usually make a bolognese. I freeze my tomatoes as the come in during the summer and then when I'm ready to make my sauce I thaw them, core them and pureee them and add them to the pot after I brown my meat. It's all good! Great time of the year!

Love to cook pasta sauce like you but freeze it for a winters day, mince etc plus soups, September glutinous tomatoes wow

Great idea! I use ugly tomatoes too. I use a thicker pot, this enamel type seems too thin and burns easily.
