Hey big bruh I started watching the live and then went to Netflix and just finished binge-watching the show and when I say you inspire me in more ways than one I am just so proud to see you accomplish all these goals that you and your family have set out to do and your work ethic to the job you had for 20+ years too cooking on the side I just want to take some of that determination that you have and that can't stop won't stop attitude and apply it to me and my cooking and get back to it but it helps when you have a soulmate that believes in you and encourages you bruh I got tears in my eyes watching this I tip my hat to you well done sir well done!!!

Chitown: I had the wife watching with me. She wouldn't let me watch without her. She became a fan. So now when I'm cooking I put on my best Fla/Iowa accent amd get busy. We cheered like we won the Championship when you won!!! 😂😂😂
Mr. Steve, I must say I really like your smoker setup, it's a dandy! A couple of things come to mind. I watch dozens of BBQ videos. Yours was not one of the best. I'm not being critical, but it had nearly 40 video minutes of you spraying something inside and outside of the smoker before you ever started. You never let anyone see the cans to read what they were, and you never said what it was. I can only imagine that it was something to easily clean up afterward. Also Your trimming the brisket.. You did a good job and you trimmed most of the Talow fat off. A lot of the trims had big pieces of meat and could have been saved for Burnt Ends or to be added to BBQ Beans. But that was your decision. Plus you could have and didn't mention why you were trimming so much off. Keep em coming but an hour and 54 minutes is a bit long.

I don’t think people are afraid if but if it’s going to be unflattering to the finish product why not trim I mean it’s your choice at the end of the day one can argue your being lazy to not trim but hey it’s all perspective at the end of the day your smoker your choice

In season 3, they had people cook a brisket with an 8 hour time limit. I think that they knew that if any cooker could pull it off, the lang 48 could.
