Anecdote time: I am a shift lead at papa johns and we have a little old man who orders one of these every other day. His name is Cowboy Dave and he calls them Papapitas no matter how many times we call them papadias. He's very sweet and always wears a cowboy hat. Maybe someday I'll make this improved version and take it to him.
we had a man come in and ask for a “picadilly” when they first came out😂
WHY DID THAT MAKE ME CRY THATS SO CUTE🥺
I had someone ask for a paparito xD
@@kade1628 he always ends every phone call with "god bless ya, babe"
i had someone ask for a pooparito

Now that's a burn.
NO, NOW YOU LISTEN TO ME! why should i waste my time at school? i am super famous on youtube. tell me, dear fo

Shit is lit in the Papa John fandom
Fun fact: folding pizza is not at all unusual in Italy, especially in Naples where 'Pizza portafoglio' is one of the most famous snacks, and it is just a pizza folded twice.
What may trigger some Italian about a papadia are probably the toppings, I don't think I have ever seen bbq sauce, or chicken tbh, on pizza here in Italy.
exactly its just simple cheap street food
Yeah, but there is a difference between Italians and "Americans who think they are Italian" (who are actually not Italian lmao).
It's a completely different world.
BBQ Chicken pizza is just a thing in America
I haven't had it though
is that a jojo reference
It’s an American thing but let me tell you, a bbq chicken pizza it fucking awesome
I could watch pizza videos all day!
Waiting for someone to make a but better on Joshua’s videos and just make everything 3x bigger on the thumbnails
Inception
I may have to take you up on this
But fatter🤣
Hello there.
do NYC Bagels or Pretzel
Btw. Folded pizza totally exist in Naples. Is called “pizza a portafoglio". It translates to "wallet pizza" and it's a very cheap and common street food.
I had it in rome too. Mjam. Can't wait to go back there.
I read it as “pizza portfolio” and thought it meant “pizza folder” 😂😂
Josh wouldn't know this because he's never set foot in Italy.
There's also a good chunk of people who eat NY style pizza that way by folding the slices, and it's common for greasier pizzas as well.
I also know a lot of people from when I was in college who would get their 2 slice meals and put one ontop of the other to eat it, especially if they were in a hurry...but several just preferred it that way.
@@elmochacho3 he literally mentioned, in this video, that he’s been to Italy, Naples to be specific, and ate a “folded pizza in a newspaper.”
I mean, I’m just saying. 🤷♂️
When using a home oven I have a few recommendations. If you really want to use tipo 00, either add 2-3 Baker's % of sugar or buy flour that has added amylase (or add it yourself!). Otherwise I would sub for regular bread flour (and bump hydration up ~3-8% for a similar consistency).
The reason it doesn't brown as much in the home oven is that tipo 00 is the finest inner-most part of the wheat kernel, and doesn't contain as much damaged starch, and also doesn't contain as much amylase which can convert the damaged starch into dextrins and then to glucose. Glucose is one of the reducing sugars that is involved in the maillard reaction - browning - and helps to explain my suggestions :)
A fellow food science friend I see:)
This guy knows what’s up.
Awesome comment! It's not the first time I hear this either; someone else suggested it's the secret to New York style pizza - which is made in an oven, funny enough. It makes sense!
Seeing Josh’ confidence with the camera build over a couple years has been a blessing love you papa ❤️
Rest in peace to the ranch dressing. I'm guessing it tasted great.
wait yeah did it just not get used at all?
He forgot about it I guess 😁🤪
Ever since a friend of mine told me “Papa John’s pizza is the best” I’ve believed it and always remember that. The only problem is I’m in Japan and cannot order from here..really need to try Joshua’s recipe!😂😍💓
Your friend is lying
Your friend probably said "Papa-Josh" and you misheard him
Your friend is wrong. Papa Johns is a big domi-NO. 😄
Papa John's is a disgrace to every taste buds in your tongue
I have heard the best pizza is the pizza you grew up with.
Love your videos man. Never fail to make me laugh! Who would have thought insane cooking and comedy was what I needed! You deserve more recognition 🙏🏼👏🏼
literally done so well that this is one of the few youtubers that I watch the whole video from start to finish without skipping even a little bit cause I am too afraid to miss a joke
You know it's gonna be a banger when Josh starts off with "Wow, this is an abomination to Italian cuisine"
I’d be interested in seeing some videos in a “But Faster” series. Show us how to make quick meals at home faster than you could by driving out to a restaurant, ordering, and returning.
We get it. You comment this ish on every video
Preach
The boy Chlebowski dropped a video based on that very premise this week.

Love the bbq and ranch recipes. Amazing smoker! Not hard to improve on the original. Thanks, Josh!
When you're here so early, the upload timer says 3 seconds ago. Perfect timing for lunch
Love this recipe! The garlic sage butter really changes the game! It's my favourite toping, I never skip it when I make pizza!
Oh it’s sage?? I never knew that! Now I’ll have to tell my bf we’re making pizza more often 😂😂
I have tried many of your recipes. You are the best!
I'd love to see a series just like this but you also try to match the same price point as restaurants. (Feels like a hardmode of this challenge, it'd be cool to see strategies and multiple attempts at balancing the budget to stay under the maximum while trying to achieve the best quality.)
Yeah the thing that bugs me when joshua roasts these fast food chain is his expensive ingredients and very long prep and cook time..if he can match the speed and price point of a fast food restaurant while still make it better, now that’s amazing
@@onlyarandomguy speed would be an insane challenge to match, it would be very interesting.
I had an ex that used to make "Italian burritos" but he cooked them more like enchiladas. Anyways, it was hamburger meat, tomato sauce, and I liked to add ricotta for filling. You would wrap it with tortillas into little burritos in a pan, pour more sauce and mozzarella on top, and then bake it. They weren't bad.
I’m hoping for a series of videos called “But Worse”, where you secretly make a horrendous version of the food, but talk about it like it’s the greatest thing ever. You then serve it to your crew and see what they think 👍
Sounds like a perfect April Fool's episode :D
Food waste 😦
basically Gordon Ramsey’s ramen, except with a taste tester
Funny
I have tried many pizza recipes before, and this one, is the bomb!!!! Thanx Joshua
Papa you work really hard, we appreciate it!
Getting handed a pizza folded in half wrapped in paper while roaming around Italy sounds like the dream tbh 🥰
You can find folded pizza like this in many Italian cities normally sold by street food vendors so they are easier to eat on the go.
I can’t get over how comical it would sound hearing Joshua editing his videos 😂 like imagine you’re going about your day and you hear him singing “whisky business” I’m weak 😭😂😂
I got you cook book for Christmas and I have made SEVERAL of the recipes
Great recipe! Loved it
It costs extra to fold the pizza. Love the way you treated your cook book. Does that mean you’re publishing a new one?
I vote this video as "whiskiest business" for all of 2022. Excellent delivery. 14.6/10
One of the highest levels of entertaining content on CZcams.
Bro watching this channel high is the best, the music, the editing
Did I miss the part where he used the ranch ? Or did he just make it and not use it on the pizza?
your right!!! now that i think about it i saw him make ranch but i dont think i saw him use it on anything.
I hope Josh opens a restaurant one day so I can work for the real Papa 😭
You crack me up but I enjoyed watching your videos for some reason I feel the love
I love this recipe I will definitely make one soon
Your videos make me howl with laughter! So quick and flipping hysterical.
Good metaphor and hyperboles, I’d give this comment an 88%, B+
I did not know this dish, interesting. It looks like a fusion of pizza, piadina and panino. greetings from italy😊
The pepperoncini is ths best part of a Papa John's pizza experience ! I ask for as many of them as they are legally allowed to add to my pizza box... on the exactly two times I ordered from Papa John's (they aren't in my area, I ordered while out of town).
I AM NOW ADDICTED TO UR VIDEOS
I’ve been watching you for the longest time, you’ve inspire me to perfect my dishes. Keep up the amazing work
The one thing I am most exited about this video, is that Josh finally presents an uncomplicated way of indoor smoking
But he lied about putting the link in the description ¯\_ಠ_ಠ_/¯
Did you complete your exit?
I love how you made a $8 Papadia to a really awesome $50 folded pizza
seriously.. i was thinking.. like ok? $100 and 2 days vs $8 and 10 minutes
I know this is at least a year out but I just found your channel. I showed my girlfriend this video and she said you should of called it the Wapadia. Really enjoying the channel!
Another blessing from Pappa Weissman.
Executive staff meeting at Papa John's a week before the introduction of the Papadia: CEO: "Ok, we have to cut costs. We need higher profits. Can we buy cheaper ingredients?" Head Food Dude: "I mean...we're already selling people cardboard and pretending it's actually pizza crust, and our meat is ... well technically it does come from animals ... of some kind. Anyway, no ... we've really cut all we can out off the ingredients." CEO: "Ok...any ideas?" Packaging Dude: "Um...you know...if we just folded the pizzas in half, we cut cut out half the cardboard..." CEO: "Ok..ok...I'm listening..." Packaging Dude: "That...that's it. That's the idea. Fold the pizzas in half." Pizza guy: "Won't the customers complain?" Packaging Dude: "Hmm. Meh, call it a calzone or some shit." Pizza guy: "That's not really what a calzone is." CEO: "Who cares. Call it something else and roll it out next week."
bro made a whole script
Anything's better than Papa Johns, but I love your videos, I could have had a super filling meal and find myself hungry after watching one of these videos.
the delivery on the paint joke was 11/10 so funny!
Snacks perfect for every friend evening / movie night / game night / even for a picnic
Love it!!!!
Editing is going to the next level.
What's next? You're gonna make your own Pizza the Hutt? New channel mascot?
I love how the but better series has turned from recreating a fast food item at home to just stomping it into oblivion. Its like a pro team playing against little league 😂.
They're way easier to eat while driving and you don't end up with a half a pizza left over at the end of your shift for the 3rd time that week so as a delivery driver they're great. You can get a different one each day instead of having the same pizza for 2 or 3 days in a row.
Hey Josh, in honor of valentines day could you show us how to make those chocolates that have the orange cream inside them?
Thank God for this mouth watering recipe
Looks so much better then any pizza I love this 🤤🤤☺️☺️💯
FINALLY HE COMES AT ME BRING IT ON!!!
Here is the defense from a Papa John’s GM lol:
I will say. Whoever made that papadia was not the best. The dough was either upside down or over proofed, that’s why it was all splotchy and rubbery looking. The bacon strips on the smoky bacon papadia was not good. The owner of my franchise took it off the menu and told us to stop ordering it because it is not good. Also there’s not supposed to be chicken on it, just ranch base, Canadian bacon, onion, cheese, bacon strips, and honey chipotle sauce swirl. The dough is actually large dough Patties cut into quarters and rolled back into a dough patty. It’s smaller than a small pizza cause you want it to be super thin, you want the edges to be completely flat, no crust. Otherwise you just get a big bite of plain bread.
im conflicted your name is colonel sanders and you are a GM at Papa Johns....
I'm waiting for this to be a KFC joke, disappointed.
@@leviathan19 that……. Is an excellent point
7:10 finally, a recipe for Neapolitan dough in a regular oven
Josh, please look into the different kinds of tipo 00 flours and their W-values! Basically, tipo 00 just says something about how finely the flour was milled and sifted but nothing about the protein content or quality. Would be great to see you do a video on this.
Joshua you are a new discovery for me! You funny chef 😜
So… crème fraiche ranch drizzle after it’s baked? Don’t use it at all? Oh ok
Someone had to say it lol
You use it as a dip for crust. You ever eaten a pizza?
Just for information (im italian). It's very common in Italy (especially in Naples) the "pizza a portafoglio" (it means pocket pizza) which is a regular pizza but folded twice (triangle shape).
He named it at the end so i just wanna give the real name to it😂❤️
hey, may i ask is it rude for you if i would say something with this "intense accent"?
i'm going to visit italy soon, so i'm curious
(write to you only because you're first comment who said im italian, sorry)
@@agataas not sure if I understand it right but if you mean if we don't like people who speaks Italian with an intense english accent I think that it's not a problem for us😂
Also because it's not your fault😂
This man is almost 2-time personal chef level. He mad a 3 cheese blend, 3 cheese!
Idk how popular that vid is but it is my favourite joke to bring up anytime I’m, well, mixing cheeses.
I love your B-Rolls ❤️
Im currently working in italy and i can confirm, if this was your attempt at their traditional "piadina", they would kill you. however i might argue it might even be better :D
hmmm i like this video but as a (former) papa john’s employee i would suggest adding a little sauce to the dough before cooking ofc but then putting more sauce on top before folding, because that’s how we make it in-store :)
But better keeps getting better and better
I’m liking that b-roll sound track!
Papa: Use Grams!
Then uses Fahrenheit.
I feel betrayed
the whole world needs to simultaneously shift to metric for everything. The sooner this happens, for distance, weight, even temperature (you know that Celsius makes so much more sense), the world will be a better place! Why wouldn't we all be using a system that allows the measurement of freezing temperature of water to be 0 and boiling to be 100. Who doesn't want that!? :) stones, pounds and ounces needs to go, miles needs to go, cups as a measuring system needs to go, haha. Let's start a revolution.
even pints need to go (as a Brit, that's a toughy). Serve it as 500ml, not 568ml
joshua would love to see you trying more indian dishes !!
This video has me asking myself if people request these But Betters because they genuinely like the things in question--or if they like the concept, hate the presentation, and just want something along the same lines that is actually edible lol
We actually have something in Naples called “pizza a portafoglio” (wallet pizza) which is basically a small pizza, generally margherita or marinara, which you can eat folded in half or quarter you can eat on the go
I refuse to call this a papadia. I will, however, call it a “Joshadia”. You’re welcome my friend.
Hungry Howies has the nerve to call a pizza folded in half a sub. The first time I ordered a sub from there I was like you gotta be kidding me. Lll
Ok, WHERE do you find an uncut SLAB of bacon! It has been my goal to find such a magical unicorn of culinary bliss. 🥺
i watch these videos just for the b rolls lol i love the music
Can you please make the almond croissant from starbucks? They are so good🤤 I have never had a papadia and he made me not want to try it.

This must be a regional menu item. I’m the assistant manager of a papa John’s and we don’t have any bee stings of any kind
@@Noahmerrell hewwo mistow assistant managwer may i hab free pizza! oWo
That compressed wood just blew my mind
I would love to see Josh feed the other guys the exact same thing and ask them to compare 😂😂
In Italy we have "Pizza portafoglio", a steet food kind of pizza wich consist in a normal pizza coocked in a woodfire oven that gets folded to be handled and eaten on the go, besides of the ingredient this isn't so strange for us :D
As a driver for papa John's I can guarantee you that they didn't want to pick up your call, the bacon strips weren't actually microwaved but it's basically microwave bacon that we put through the oven cause of the baconmania event we did. But yeah they usually skimp on the toppings, if I couldn't make it myself and then get it for half price I wouldn't be eating them but since I can they're my go to.
Honestly let's do a Papa John's AMA so if you see this and have any questions ask away.
I have had enough of this, watching these videos at 4 am... Why am I even torturing myself??
Kendrick just vibing is just a mood 😂
It always sends me over the edge that despite all he does he cant be bothered to make his own mayo when it's so simple and a 1000 times better than what he's probably using
Maybe he just made it off camera
The papadia uses a quarter of a 14” dough patty. Soo it’s definitely gonna be thinner than yours. It’s also specifically designed to not have a crust
Every time I hear you say whiiiiiisky business it sounds just like in the heat of the night ending lol
Lol I got a video ad for DiGiorno pizza right before the video started, I think it was a challenge xD

Hey Joshua, been watching a lot of your videos and would love to see a video on profiteroles. They are french pastries and very similar to choux pastries. I hope all is well!
A local place use to make these but they called them wedges. They had like half an inch of mozzarella, large pieces of fried chicken soaked in buffalo wing sauce, tomato's and lettuce and I was in heaven any time I ate one of those diarrheal coagulating diabetes loafs.
If you could I would try bojangles. So good!
