- The Potato Soufflé recipe is so easy and delicious. The smell of fresh parsley combined with some garlic goes perfectly with the flavor of parmesan and cheese.

Ingredients:
• 6 medium boiled potatoes
• 30 g butter
• 3 teaspoons of parmesan
• 60 g cheese
• 2 eggs
• 2 spring onions
• Parsley
• 2 cloves garlic
• 30 ml milk
• salt and pepper
• 100 g breadcrumbs
• chives
• paprika
Step 1:
Mesh 6 boiled potatoes with a potato masher
Step 2:
Add 30 g butter, 3 teaspoons of parmesan and 60 g cheese and stir until well combined
Step 3:
Separate the egg whites in another bowl and add the yolks on the mixture.
Step 4:
Chop the spring onions, parsley and 2 cloves garlic and add them into the potato mixture
Step 5:
Add 30 ml of milk and mix until well incorporated
Step 6:
Whisk egg whites and combine them with the potato mixture
Step 7:
Season with salt and pepper
Step 8:
Grease 4 ramekin dishes with butter and dust them with breadcrumbs.
Step 9:
Bake at 175 °C for 20 min
Serve immediately.

Looks tasty - maybe a bit rustic and dense... probably I would like it more than the usually rather eggy and airy shuffles.

so in the instructions it says to add 2 eggs but you add egg yolks instead and 3 eggs are missing from the table. is it because 3 egg yolks are equivilant to 2 whole eggs?
Hello, Vinnie! I used 2 whole eggs: 2 yolks and 2 whites. The rest of the eggs were used just for design :) First you need to separate the egg whites in another bowl, add the yolks in the mixture and then, whisk the egg whites and combine them with the potato mixture. This recipe is very tasty! Enjoy!
The souffle,s would be lighter if the seasoning (S & P) had been added when mixing the egg yolks, and the egg whites folded in three stages.
