I am from South India and we use a lot of coconut in our cooking. One way to crack the coconut is to use the pestle (of mortar) and hit it horzontally, along the 'equator' and it breaks open into two perfect halves. Then we have a graters at home, and we grate it and use it in cooking. Also back home in India, they keep some coir (the out fibrous portion) attached to keep the eye closed, so it helps with the shelf life of coconut.

Wow thank you for the great reply. I'll definitely give your method a shot next time! I love the idea of throwing fresh grated coconut into a dish - sounds like it'd be great in a curry. I have started draining the coconuts first before breaking the shell - one of the eyes is always a bit soft and I've found a cork screw works well to open a hole through the soft eye to let it drain.

Great video... one time I removed the shell from the coconut using the same rhythmic knocking method leaving the coconut whole and intact with the water still inside... :) I was very proud of myself... a safer method for taking out the flesh from the shell in case it breaks and gets stuck is to use a eating knife to remove it instead of a sharp pointy one... I have cut myself a number of times trying to remove shell with sharp pointy knives.

If you separate the fat, and store it in its own container, will it last longer in the fridge, or does it spoil as fast as the milk? I have no use for that much fat in just 3 days. But the milk does taste fantastic! Nothing like what you buy in a box from a factory. Tastes like dessert, so so good.

Haha, you are so right. It is nearly impossible to get a steady supply of fresh coconut in the states. I sometimes try to make due with what's available in pursuit of using "raw" foods. These days I mostly stick to independently sourced raw dairy for fats. I have also tried buying frozen shredded coconut meat and blending with water to make coconut milk and this seems to work ok, but is no doubt not as good as the fresh version.
