I make ribs basically the same way. I have a gas fired vertical smoker and cook them in it. After the first cook they come out of the smoker and get wiped with sauce, wrapped in foil and back into the smoker for 30 minutes. Everyone loves them. I also do not take off the silver seem. I do not score it either and it makes no difference.
