What we do at my work (a pub) is cook the pie content and then instead of letting it cool then adding the top and cooking, is bake the pastry separately and put it on top of the pie once everything is cooked. If you're cooking a lot of these, say for a dinner party or something, I would recommend doing it this way as if you burn them then it won't be that much of a catastrophe.

If you don't want to use pastry switch things up & put a layer of mash & breadcrumbs/cheese, over the chicken & sauce. I call that a Chicken Coup Pie. Changing further you can make a white parsley sauce in place of the velouté. It goes really well with the mash topping.

What I hate though is whenever I look up a vegetarian recipe and they all are healthy. Like no! I want a heart creamy pie recipe not come with all those superfoods! As it's starting to cool down in Aus (finally), I've made this for dinner tonight guys. Yum yum yum! I didn't make the stock as I had some to use, I used chicken thighs chopped, I only had 1 leek, I added mushrooms and I also topped it with sweet potato mash as my partner doesn't like pastry (weirdo). So it was a few adjustments but it is so yummy! Rich and delicious, but the lemon really cuts through. It made 6 good sized individual pies, with 4 in the freezer for another night. This one is getting saved. Nice work lads.

I tried this today-- it came out absolutely delicious. Only changes were subbing garlic powder as our garlic mysteriously vanished... And my mom decided to help me out by boiling the chicken whole. Had to let it cool to peel the meat off, but tossed everything back in the pot and the stock came out just fine.
All and all super delicious, though I might try a more savory topping than puff pastry in the future. Thanks for the recipe, sorted! :)

    hey guys!
i think you should totally do a sorted twist on a Slovenian dessert. it's a layer cake and it's called ''Prekmurian layer cake'' or as slovenians like to call it ''over Mura moving cake''. it is made out of wallnuts, poppy seeds, apples and cottage cheese.
    or,
another slovenian side dish which can also be a dessert. English language translates it as ''dumplings'' but that's not what they are. we call them '' Štruklji'' and they are like a rolled pastry whith cottage cheese (or other fillings) but boiled in a cloth. it can be an amazing side dish for a beef stue or other gravies, but if you fry some bread crums in butter, pour it over and sprinkle with sugar it is an amazing dessert!
i just thought some Slovenian dishes would do you good!
hope you try them and stay awesome!

NOT the first time I watched this, I know because I'd already liked it :) However, having been learning from them, I'd now put in some veges: fresh spinach, zucchini, and broccoli- because I like them, and they go well with chicken! Also, just as a nod to the ONLY OTHER youtube cook I watch (Townsends), I'd add a very tiny pinch of nutmeg. If you don't know that channel, it's historical cooking, but he seems to sneak in nutmeg into most things. I'm not sure I'd add enough to taste, I'd have to try it first, before I'd serve it or recommend the nutmeg to anyone else.
    I miss these educational videos.

This looks delicious! Could you guys do some more quick student food please? I don't mind more than one pot but I don't want to spend more than an hour cooking!

Nadhirah Binti Rokhibi Just a little extra stock, maybe add a few drops lemon juice.

I know this is a late reply...but I have found a small amount of balsamic vinegar in conjunction with additional stock works quite well as a substitute for wine in heavier poultry dishes, such as stews or pot pies. The acidity seems to add some of the depth you would normally achieve with wine. I tend to use a mid range balsamic for this purpose.
