    ***Room temperature is around 75-78F/24-26C - after 3 sets of SF and 3.5 hours or longer fermentation until 80-90% rise. If the room temperature is higher or lower the fermentation time can be shorter or longer. Shape, cover, let sit at room temperature for 2 hours & bake.
    Or after letting sit at room temperature for 1 hour, refrigerate overnight & bake next day (bake 5-10 minutes longer).***
    * 3 sets of SF.
    * 3.5 hours or longer BF until 80-90% rise.
    * Shape, cover, let sit at room temperature for 2 hours until the dough reaches 85% of the pan.
    * Bake in preheated inside of roaster big enough loaf pan fits in at 410F for 35 minutes covered.
    * Bake 10 more minutes uncovered.
    * Enjoy!❤️
    Open bake without steam:
    * Bake in preheated oven at 375F/190C for 40 minutes.
    * Turn the pan around last 10 minutes of baking until internal temperature 206-209F/97-98C golden brown.

    Sourdough starter / Levain ingredients (prepare before going to bed):
    42g active starter
    42g bread flour
    16g water
    Oatmeal tangzhong ingredients:
    50g quick oatmeal
    150g water
    Dough ingredients:
    100g prepared stiff starter
    Prepared oatmeal tangzhong
    210-220g water
    400g bread flour
    25g honey
    4g salt

    * 샌드위치팬을 뚜껑 있는 팬에 넣고 뚜껑을 닫고 35-40분 구워요.
    * 뚜껑 열고 10분 더 구워요.

    Thanks for another great recipe! I've been making your soft Sourdough Sandwich Milk Bread for a couple of times now and it's my favorite. I like the idea of baking the bread loaf inside the roaster, I'll definitely have to try it.

      This is my first try no knead sourdough bread baked in a sandwich pan. I am very happy with the outcome, and it is so soft and delicious! I baked in the roaster to creat steam but still soft crust and crumbs with oatmeal tangzhong.
      It is great sandwich bread if you prefer soft crust without oil or butter.

    I'm waiting for my 3rd S&F of this recipe right now. I started making this bread with the stand mixer but then I switched by hand because I didn't know how to continue with the S&F part. I made your soft potato bread with instant yeast yesterday and my family had a delicious breakfast this morning. Thanks for all your recipes, they're no fail. About 1 month ago I made the stollen and omg, it was amazingly delicious. Mine turned out much bigger than yours, not sure why because I did everything you say. I'm curious to know if you're using KA bread flour in your recipes or another brand that might be better?

      @@CastleCookingit turned out to be a focaccia! I had to leave the house unexpectedly during bulk fermentation and couldn't return on time.
      The BF was too long (totally my fault, not your recipe!) so I couldn't shape it properly to put it inside the loaf pan. Dough was very sticky and I noticed the gluten network started to degrade so I added oil to a rectangular pan and decided to let it be as focaccia. Lol! It was so good😍 Nothing goes to waste. I'll try this recipe again. Do you have by chance a recipe to share for a quiche crust pie that uses discard or starter? Thank you!

      I don’t have a sourdough quiche crust recipe. But I have one with without sourdough starter quiche recipe. And sourdough pecan pie recipe made pie crust using sourdough starter/discard - you can make sourdough quiche crust not including honey/sugar which pie crust calls for.

    Hi dear, would like to check if I put my loaf pan on the steel baking tray, is it the baking is same like using open bake concept? Cos my Dutch oven is too small for the pan to go in. Thank u.

      Yes it is the same concept as open bake concept with steam which I haven’t tried it yet with this recipe. Cover it with foil last 10 minutes of baking if it gets too dark crust.

      Hi Gayle,
      I never used regular oatmeal. I am sure you can cook regular oatmeal to the same consistency as the oatmeal tangzhong in the video. Once you cook the oatmeal (very soft) add about 188g (oatmeal tangzhong was weighted about 188g after cooked).

    How soft is the top crust? All of the sourdough I've made has a SUPER hard crust

      Unlike Dutch oven artisan bread this is very soft crust including the top crust. You can fold the slices as you can see in the video. Great soft sandwich bread without adding butter or eggs.

    Thanks, gonna try this! Can I ask - why only 4g of salt? Usually I would do 2% of flour weight so that would be 9g for this recipe

      Hi Michael,
      It’s a wonderful sandwich bread with soft crust and crumbs without adding butter/oil, milk or eggs. It’s my first tried no knead sandwich bread and I love it!
      I add 4-5g salt for most of one loaf of bread recipes. I use less salt for most of my baking and cooking. It doesn’t affect the taste or baking process (less salt or no salt can take less proofing time) in my experience. It is me and of course you can add more. 😀
      I know many bakers recommend 2% salt and I haven’t tried it yet but I should try it and see what it changes.

      6:15 - are you referring to the sandwich pan or granite enamel roaster?
      If you don’t have a Pullman sandwich loaf you can use regular sandwich pan. If you don’t have a big enough Dutch oven or roaster that sandwich pan can fit in you can bake open bake.
      Here is the open bake temperature and time which I just baked open bake without steam. It worked really well!😀

    How to make active starter and stiff starter

      Hi RoseAnn,
      You can make starter using water and flour. No discard starter recipe takes about 2-3 weeks and discard starter recipe takes 10-14 days. Discard means take out some of the starter before you feed. You can compare these 2 recipes and you can try. Please let me know if you have any questions. Please read the addiontional descriptions below the videos.
      Once you successfully establish the sourdough starter you can make stiff starter with the established starter. I usually give instructions on how to prepare the levain (exact amount of starter/stiff starter a recipe calls for) in the video.

      Yes you can omit the oats. You will need to add more water - 0at tangzhong contains pretty good amount of water.
      I will be posting next recipe video in a few day - no knead honey rye sourdough bread baked in a sandwich pan. Pretty similar to this oat sourdough sandwich bread except no oat tangzhong in it.

      Oh I was thinking you want to do it without tangzhong. Adding flour tangzhong instead of oatmeal tangzhong would be very different amount of water and flour in tangzhong - this I can't advise you how much water and flour to add to tangzhong which I haven’t tested. Sorry about this. Soon I will test it and will make a recipe video.
