Nice podcast but me being restaurant owner myself just wanted to state my pov, only the service boys will enjoy the entire tipped provided by the clients without knowing there r lots of other hidden hands also inside the kitchen, ur chef, assistant,ur dishwasher, ingredients care taker behind ur beautiful delicious experience on the table. If u put it in the tips box together they will share it every month end. We do it that way n u got to see their face while counting. It will melt u

In India waiters or helpers dish washers or cooks they all get their own salary from their own works. So the tips goes to all staff members all working then the food is on the table with spoon fitted. The waiters get salary and tips that is like the waiters hard work only in restaurants. My experience in cafe the most hardworking staff in cafe in India is the dish washer . It hv to b naked hand in water whole day no any gloves facilities. On the whole the kitchen care taker works the hardest after all without kitchen team the food is impossible on table. But I heard in western countries the waiter only get tips not salary . That’s why he really needs the whole tips. So on…
