Enoch has always been inspired scripture by the Eastern Orthodox Church. The Ethiopian Orthodox church just carries it in their Bible. It did not come out of Ethiopia. It came from God and Israel.

The Syriac book of Enoch (second Enoch) seemed legitimate to me. I want to know if it's been authorised.
So, the way some of this presentation is framed comes off like it's from a non-apostolic Christian perspective and it makes some mistakes common to modern scholars (who are judging a tradition while remaining outside of it). The Books of Daniel and Enoch were ancient oral traditions that eventually got written down many centuries (sometimes a millennia) later. Oral tradition was more common in the ancient world than written tradition. There is no stumbling block to be had for the Jew or Christian for Enoch or Daniel being composed more recently than the age of the subject matter/content of the text itself, because the oral tradition it is based on emanates from a far older period of time, often, than it's written composition. Modern scholars get wigged out by this, but that's just the way it was (most people were illiterate).
There also isn't a remote stumbling block to the Gospels being written in Greek if Christ spoke Aramaic given that the Septuagint was received as inspired and the Church judged it as authoritative - along with the Gospels, of course I know this wigs modern scholars out as well because they are often materialists, but apostolic Christianity isn't based on a naturalist or materialist worldview whatsoever. So you can't strong-arm the scriptures with a phronema that is alien to the text and tradition. It may be a stumbling block to some (not all) sola-scriptura Protestants and modern scholars, but it definitely isn't to Catholics or Orthodox Christians. We aren't the "people of the Book", but rather, the "people of the Holy Spirit". Translations differ and oral tradition is developed over time - We aren't bothered by that. It's how things work.
Also to this day the canon of Scripture is not "closed" by Orthodox Churches and technically, even the Roman Catholic Church argues it cannot remove texts, but it could in theory still add books to the canon.
Also - The date of composition of Enoch is NOT why the Christianity of the Roman Empire rejected Enoch. The principle reason it was rejected is because they didn't know how to square the dilemma of immaterial spirits mating with women who aren't supposed to be able to reproduce which Enoch discusses. That was a glaring mistake in the presentation. This guy clearly isn't Orthodox or Catholic. The Apostolic/Ante-Nicene Fathers did not have an issue with the content of Enoch. However, the Nicene Fathers you mentioned did take issue with the content and adopted a very different interpretation of the nephilim narrative in Genesis, divorced from the Enochian tradition.
I don't understand why scholars get so tripped up on the date of composition of scriptural texts. We literally don't care. It's a problem for modern scholars and so-called "experts". Not for us.
