RECIPES:
Sourdough Blueberry Muffins:
1 cup butter
2 cups maple syrup
4 eggs
1 T vanilla
4 1/2 cups flour
pinch of salt
4 1/2 tsp baking powder
1 cup sourdough discard
5 cups fresh blueberries
Whip butter and maple syrup till light and creamy. Add eggs and vanilla and mix well. Add flour, salt, baking powder, and sourdough starter. Fold in blueberries. Let sit overnight in the refrigerator (for fermented benefits).
The next day, spoon into muffin tins (fill to the top).
For streusel topping:
1 cup flour
1 cup oatmeal
1 cup sugar
1 tsp cinnamon
1/2 cup butter
1 tsp vanilla
Stir together flour, oatmeal, sugar and cinnamon. Add butter and vanilla, using a pastry blender until it resembles course crumbs. Divide between muffins
Bake at 400 degrees for 25 mins.
Recado Chicken:
1 recado ball
1/3 cup vinegar
1/3 cup ketchup
1/3 cup bbq sauce
1/2 cup sugar
1 tsp seasoning salt
1 tsp garlic powder
2 tsp salt
2 tsp onion powder
3/4 cup water
Heat sauce until boiling. Pour over chicken breasts and cover with onion slices. Bake at 350 for 2 hours or until it reaches an internal temp of 180 degrees.
Coleslaw:
Grate 1 head of lettuce, 7-8 carrots, and 1/2 purple onion and mix.
For the dressing (recipe from my mom):
1/2 cup avocado oil
1/2 cup apple cider vinegar
1 tsp sugar
1 tsp celery seed
1 tsp mustard powder
2 tsp salt
Mix and shake well. Pour over coleslaw and stir.
No-bake Blueberry Cheesecake:
2 cups graham crumbs
6 tablespoons butter melted
16 ounces cream cheese softened
½ cup granulated sugar
½ cup heavy cream
5 cups fresh blueberries
In a small mixing bowl combine the graham crumbs and butter. Mix until combined. Pour into baking dish, and press down to make the crust.
In a mixer combine the cream cheese and sugar until light and fluffy.
In a separate bowl mix the heavy cream on low at first, then increase speed to high. Mix until the heavy cream becomes whipped cream.
Pour the whipped cream into the cream cheese mixture. Mix on high until combined. Scoop into the baking dish and smooth out with the back of a spoon or spatula.
Top with blueberries and chill before cutting into squares.

What a productive garden. Love when you go in your garden and get all your ingredients you need for entertaining. Your little guy is growing so fast and so cute.
TIP FOR SALADS 🙂 Letting salads with brassicas (kale, shaved brussel sprouts, broccoli, etc) sit in the vinegarette for an hour or so before serving helps soften the veggies so they are easier to eat. Think of it like marinating! Makes it more tender and rehydrates with the flavorful vinegarette.

Everything looks so delicious!! We have a small garden, but I would love to have a garden like yours one day. I find that massaging the kale with lemon juice and olive oil for a few minutes (you may have done that) makes for a delicious kale salad. Love your videos!!☺️

Lil tip when dealing with fresh kale is to massage it with some oil and vinegar dressing with lil salt to “ tenderize “ it. Makes a world of difference ❤

Just in case a new cook is going to make your coleslaw, in the video you said "lettuce" and in the recipe it also says "lettuce" instead of cabbage. The food looks great!

I am pretty sure he or she is a Newfoundland. Giant breed, excellent with children and love the water. They are considered nanny dogs however if you want to keep one indoors get ready for slobber and tons of fur everywhere. I board dogs and have several as regular customers. Hopefully Steph will do a little puppy video so we can see more of the new member of the family. 😃
