Trapping Wild Pigs In Louisiana (Catch*Clean*Cook) Huge Pork Gravy For 150 People

- In this video, I show setting the trap and then catching six perfect size pigs the next day. I cleaned and quartered the pigs at the camp. Back at my house, I cut up the four pigs with my meat saw and seasoned all the meat with KFRED Seasoning. A couple days later, I cooked for 150 people at Whitco Supply. We had a huge pot of wild pork gravy, served with white beans, smoke sausage and corn maque choux. It came out so good, everyone couldn't believe it was wild pork because it had no gamey taste to it.

Makes me proud of my Cajun heritage. A typically practical, ethical solution to the problem of wild hogs. Just eat the darned things! I live up north now (Minnesota, not Shreveport), and I remember the neighboring state of Wisconsin being concerned about an "invasion" of crawfish. Seriously, I didn't see a problem a few hungry Cajun families couldn't solve then either.

For those who have not had a chance to experience Louisiana Hospitality, this is so typical of the wonderful people and the food they cook. They truly love good food and sharing it with others. From Crawfish, to Boudin Sausage, good food is found everywhere in Louisiana! I'm going looking for some KFRED.

Have you left La ever? Theres food in all states last I checked. Our state has real hogs. One meal of wild boar would be fun but only if Nugent is wearing the apron.
We also have corn fed beef. And the largest whitetail in the U.S. (deer sausage).

You're a great real American. I love Louisiana people. I deployed there when Katrina happened and I couldn't believe how solid everyone was even losing everything. Real badass and good people. The Cajun people were staying at the hospital we were at on read Blvd and they would cook a bunch of food and feed all of us soldiers. I would love to go back someday.

Great video. You're blessed to have this hog problem, I'd be glad to have this kind of "problem" in my country too. Great way to get access to highest quality meat - no growth hormones, no fed antibiotics, just pure wild meat. Best regards from Czech Republic.
Unfortunately, people wanting this problem is exactly why they are so wide spread.
People would truck them around and release them so they could have a "wild hog population" but they just take over and destroy land.
They are a real problem and cause serious damage. They are not like market hogs. Most are tough. A meat cuber or grinder is a great thing for this.

I am a vegetarian myself but I appreciate you taking care of the feral hog problem that is pestering not only USA but other countries as well. I'm happy that you take care of the meat that the animal provides. This, in my opinion, is how you take care of nature.

These are delicious meat! It's real meat unlike the pork meat in grocery stores where it's all laced with synthetic hormones.
My Brother-in-law, Earl Cantrelle grew up on the Bayou with his twelve siblings. He was a true Canjun, very kind man and loved his roots. He was a tug boat pilot for almost for sixty years, forced to retire because of his age. Watching your videos reminds me of him.

i mean… it was sort of like effectively its own country before Thomas Jefferson and the Louisiana Purchase while yet still a “formal” colonial territory of the Royal Crown of France… and even after that for another hundred years. The Acadians who migrated there and established Cajun and Creole culture were, effectively, their own independent nation just, they never formally “declared” independence from France, or from the fledgling USA after the Louisiana Purchase. Hahaha but yah, pretty much, effectively, an “autonomous region” as the modern saying goes, autonomous for couple hundred years and the Cajuns became “Cajun” during that time. And we are thankful indeed!

Forget the cooking lessons, I like the community that you have.... that's the best part.
I can suggest that for the rest of the carcass - innards etc, you can use a farm mixer and mix it with compost and Molasses... then lay it into a windrow and introduce compatible earthworms to convert it into fertilizer. Black solder flies will do the first part followed by the earthworms (which must be left at the sides of the windrow) -- the earthworms will know when to move in after the black soldier flies.
Cover the windrow with breathable composting fabric to keep out the rain.. that pile of super rich compost can grow lots of food.

I worked in the Oil Patch out of Lafayette. Loved every minute of it. Prejean's was my favorite for Gumbo but I also frequented Randol's for the open Mic nights and of course the food.
