Jingalov Hatz: the best way to conquer an overgrown garden

  • If you ever wondered how to cook up a ton of vegetables while also being delicious, look no further. Jingalov/zhengyalov hatz(Ժենգյալով Հաց) is a flatbread created by ethnic Armenians from Nagorno-Karabakh. It was made to utilize the hundreds of different wild greens collected by villagers in the mountains of eastern Europe.
    In this episode, we are going to go over the history of jingalov hatz, the theory behind the mix, touch on a bit of plant toxicology(poison control hotline 800-222-1222), and finally demonstrate how to make it at home.
    Ingredients:
    dough:
    300 grams flour
    150 ml or grams of water
    2 teaspoons salt
    6 cups of combined veg from each category;
    bulk: Kale, chard, carrot tops, spinach, etc...
    herbs: cilantro(essential), dill(essential), mint(essential), parsley, thyme, basil, etc...
    bitter/sour: sorrel(you can use woodsorrel but know that the oxalic acid might cause some gastrointestinal distress), sumac powder, arugula, beet greens, etc...
    1/3 cup olive oil (more or less)
    dough:
    1. combine flour, salt, water and mix until cohesive. set aside for 10 minutes
    2. knead until smooth
    3. separate mass into 90 gram balls (more or less depending on how big you want them) and set aside for another 10 minutes
    veg:
    1. wash vegetables and remove thick fibrous stems
    2. roughly chop all greens minus green onion(finely chop green onions)
    assembly:
    1. flatten a ball of dough into a disk and roll/stretch with your hands until extremely thin(almost translucent).
    2. mix 2 cups of the vegetables with a pinch of salt, sumac, and a generous splash of olive oil
    3. pinch to seal starting from the middle and going out to the edges leaving a hole at one end which you will force air out of
    4. karate chop down the seam to seal it, and squeeze air out of the open end, and seal it by pinching.
    5. remove excess dough on either end by pinching
    6. cook over medium-medium/high heat flipping every 2-3 minutes or until the dough is opaque and spotted with char
    7. enjoy, preferably with a nice red wine
    drink pairings: Red wine is traditional in Armenia, but really anything with herbal characteristics will work well.
    Red: Cabernet franc/Cabernet sauvignon/Bordeaux blend (preferably cooler climate so the grapes express more pyrazine characteristics)
    white: sauvignon blanc, vinho verde, vermentino
    non-alcoholic: mint tea, lightly sweetened black tea, mint doogh/t'an (Armenian: թան)

    I highly appreciate the scientific approach - too many people try to pass off tomato leaf pesto as completely safe. Still You need to be careful with this cancer research :)

      Thank you for your thoughtful insight! And yes, I absolutely agree! Solanum plants are such a popular genus in traditional eastern medicine that they pop up once in a while in health blogs, but holy cow do people take the marginal benefits out of context(eg. making tomato leaf pesto) yikes! They definitely need more clinical study before being put into therapeutic use!
