    Biggest cooking tip, you can always add but never take away when it comes to incorporating your ingredients. So when you add wet ingredients, slowly add them until you get the consistency you want, not until you’ve added all wet ingredients. Recipes aren’t exactly a one size fits all, people use different products based on their dietary needs, as well as many other outside factors. You are doing great, everything you made looked awsome, your skills are just getting better and better.

      100% agreed! Even the weather the day you're baking something can influence in the quantity of wets you need to add. Cooking is a beautiful and delicious science experiment.

      Uh don’t mind me asking but, what’s the difference between a wet and dry measuring cup? My family always uses the same measuring cups for dry and wet ingredients

      @@heythere3288 It isn't too noticeable with some but usually a measuring cup used for liquid will have a lip, like a pitcher for water, and a dry one will be a plain cup. The reason a dry measuring cup is flat is so you can level the top for exact measurements.We don't believe in exacts in my family but those are the usual designs where you can spot the difference. Hope this helped answer your question! (Summary: Measuring cups with a lip is for wet, flat measuring cup is for dry)

    I think your dough is always off because you’re using a solids measuring utensil for your liquids. They have different measurers specifically for liquids.

      If you're using cups/teaspoons/tablespoons, there's no difference between liquid and dry measure. Recipes involving dough are typically weighed because cooking dough is based on controlled scientific reaction. It seems like she converted a recipe that was originally written in weight units into volume measure, i.e., cups/teaspoons....and then, honestly, didn't measure carefully. The volume of flour can vary from day to day depending on how packed it is- for consistent results with baking or dough, you weigh your ingredients.

    The key to baking is correct measurement. I see that you don't fill up the cup all the way with flour which is probably why your dough is too wet. Remember, you can always add more flour to balance it out :) also if you wanna be accurate then use a different measuring cup for liquids

    Your dough is slack because you're over mixing the dough when you used a high speed mixer from the start, this breaks the gluten structure. Use either a spatula or paddle whisk and just incorporate the water (save around 10% of the total water separately to activate the yeast) until it looks like a shaggy mess. Cover it and leave for around 15 mins - an hour. During this period the dough will hydrate by itself (autolysis). Come back and see that the dough is more pliable. You can then fold in the yeast mixture, along with other ingredients, i.e.: butter, schmaltz, sugar, grains, etc... with your hand mixer on the lowest setting. You will also need to rotate the bowl while mixing this will take roughly 7 mins at least.
    If you're mixing an enriched dough, (has fat content) oil your hand, rip a small. Piece and stretch the four corners. If the dough can stretch so thin that it's translucent without tearing, that means, the gluten is well developed and ready for fermentation. The same applies with non enriched dough, bit wet your hands with tap water rather than oil

    If u don't like red bean filling u can basically just put lotus paste with an egg yolk in the buns, it's a chinese version and it is like REALLY delicious :))

      The red bean bun is called 豆沙包(technically the same thing lol). Theres also meat buns with egg inside. Bun dough is hard to make at home cus it requires shit ton of mixing so hand knead buns tend to be lumpy. I hv them for breakfast since young lmfao

    COOKING TIP, NAOMI!: one possible reason your doughs always come out too liquified is you’re scooping your flour incorrectly! Easy fix. Instead of pouring your flour into your measuring cup, scoop it out with it! Flour is supposed to be “packed.” Meaning you’re not getting nearly enough when you pour it in. Hope this helps!!

      @naomi ; also you’re using the measuring cup (which is for dry ingredients) to measure liquids, even though it’s not much of a difference there IS still a difference so using a liquid measuring cup would probably make your dough better. love you naomi

      Actually read the recipe and honestly when in doubt weigh it out to get the most accurate measurement. Packing the flour down can make the actual amount of flour in a measuring cup vary drastically. Most recipes recommend to break up the flour first and sprinkle/ scoop the flour in making sure to not pack the flour, because it’s easier to get a more consistent measurement when it’s aerated versus pack. Keep in mind the the moisture of flour will vary based on location meaning it will pack down differently each time you go to bake.

    When measuring your flour it should be overflowing and then levelled with a flat metal spatula or knife for perfect measurement, not packed but filled to the brim. I think that’s why your ratio has been off ☺️

      Something you have to consider is air humidity. If you live somewhere with higher humidity then the dough usually doesn't need much water since the flour will suck the water out of the air. And vice-versa if the air is dry you might have to add more water of course.

    Naomi! I’m not a chef, but I do have quite a bit of baking/cooking experience, and I’ve found that with baking (especially with dough) weighing out your dough instead of measuring gives you basically the perfect amount that you’re looking for. Hope this helps! ˚ʚ♡ɞ˚

    The amount of water you need for your dough also depends on your humidity and your flour :) It's best to add a little bit of water at a time

      Came here to more or less say this.
      Most flour absorb liquids significantly slower than weizenmehl - including reismehl. So you often want to add water and work the mixture to speed up the absorption process to see if you've truly added enough water or not.
      Also, don't straight away take out the rice balls from the boiling water after they float. Leave them in there for about 1 minute more for the insides of the balls to cook!

      i understand what u r trying to say with the chicken broth but they're still mostly non vegan although i know in some instant ramen noodles there are veggie versions of chicken broth made with artificial flavour

    I needed this video to watch someone being so comfortable with making mistakes...my daily life is tedious and I feel like I have to be on point all the time.     To be honest when it comes to doughs you have to properly measure the ingredients, not partially or eyeing it. Simply because baking is a science and you have to be as exact as you can. Most of the time that's why the dough comes out a lil off. But usually it's an easy fix by adding a little bit more flour or water

    hey Naomi, you exchange bean water to get rid of impurities and gas-causing substances, but the second theory is that it's better not to change the water because you are getting rid of vitamins and minerals. I also wanted to mention that the beans should not be soaked 24 hours, it should be soaked for a maximum of 12 hours because then the fermentation processes begin

    You're really good at cooking! With the dough for the red bean buns, you did everything right! The dough will usually become really sticky like that in the middle of kneading. If you just keep powering through until the dough stops sticking to your hands and becomes smooth, it will be much fluffier. This can take a while sometimes but your dough looks good, just need to knead more :)

      they used to call hospitals infirmaries back in the day in English (and some old hospitals are still called that), which is pretty similar to Krankenhaus since both terms mean "place/home for the sick"

    When you are measuring dry ingredients, you almost need to pack the ingredients to fill the measuring cup completely and then take a spatula or flat utensil and level off the top so that the ingredients are flush to the top of the measuring cup. Because it appears you are not doing that with the dry ingredients and the wet ingredients being, well...liquid, it is filling the entire cup and you end up with less of the dry ingredients than what the recipe technically asks for and the right amount of the wet ingredients

    I know dry ingredient measuring cups hold the same amount as liquid measuring cups, but it might be worth a shot to try using a liquid measuring cup for your water since the measurements are always off for you.

    You don’t have to follow measurements for water😭😭 you just add a tiny little bit, work it a lot, and repeating this process until it’s done, it’s all an eye thing

    I am going to try to make these recipes! Thank you Nomi. In case you are wondering the bean water replacement could be to make it more digestible. Also you might not be filling up your measuring cup enough with flour which is maybe why your dough is runny. Try scooping the cup and leveling it off.

    So, for the beans - the first boil takes the place of the soaking overnight. Had you soaked them you wouldn’t have had to do the first boil. Really, doing it either way is fine. I make ham hocks and beans quite a lot and when I forget to soak them I do it this way.
    The problem with the dough is the humidity (moisture in the air). If it’s more humid you need less water in the dough. It really is a science. Plus, and you can play it back, you’re measuring the flour but you’re not putting a full cup of flour in it. You need to scoop it out of the bag and level the top with the straight back of a knife. So for the bun dough you didn’t add the proper amount of flour to the water. Try it that way next time and you’ll notice a big difference :)

      YES THIS! I can't tell you how much i was silently screaming at my screen because it wasn't the right measurement of flour, especially considering that baking is all about measurements. regular cooking you're able to take some liberties.

    In every dough making always add less water and then when it has became a structure and u still think in needs water add a very little water and knead until it becomes a dough this process takes alot of time like almost 30 to 35 minutes u were rushing alot so it made it like slimely

    In The Netherlands they sell these steamed buns (Bapao) in the supermarket. I know them for at least 25 years if not my whole life. We eat it mostly with chili or garlic sauce 🙈 You need to try LEMPER. It's so good 😍

    Tip: There are two different types of measuring cups. One for dry and one for wet ingredients. Now the ones you see that I like mugs are for wet ingredients. The one you use it for dry ingredients. Now they both might say cups but they still quite different. It’s similar to if you weigh your ingredients instead of measuring them.

It's the same if you measure all your ingredients with a dry measuring cup even your wet ingredients when you need a wet measuring cup your mix is going to be off.

    I loved this video! Btw, there is a korean version of the rice porridge aswell, they call it dakjuk or juk and it is usually made with some vegetables and sometimes chicken. Since it is very easy to digest and not spicy at all they eat it when they're sick and it is a very common meal for children

    Love watching your videos.
    Regarding the dough being wet. You should weigh your flour instead of the measuring cups. I’m a pastry chef and it’s crazy how big of a difference there is when you use a cup. Some cups are different sizes, some flower is more compact than others and it just can vary too much. But if you’re using all purpose flour or whatever flour you use a cup of it will always weigh the same whether it’s compacted or not.
    Also depending on the altitude of where you live you should cut back on the water in your recipes. If the recipe says one cup use 3/4 of a cup. You can always add more water afterwards.

    I'm not a professional bread maker or anything and actually I tend to try to stay FAR away from ever making bread lol. But I believe when making any dough for bread or buns or anything 'bread-like', you also have to pay attention to the temperature in your house/kitchen as well because it can mess with your recipe. Or more specifically the humidity levels I think? That's probably why your doughs always end up so sticky even when following the recipe.

    I was just thinking how the red bean steamed buns look like very big knödel and then I remembered germknödel are a thing lol I literally love them as I am from the most northern part of Croatia, so our cuisine is completely central european and we eat knödel mostly with plums or different kinds of jams and they can be rolled in roasted semolina (Grieß). Btw the texture off the bun looked heavenly, so I would definitely try making it

      @@Mondlunar if there are no english versions yes. Especially like “Kohlroulade” you have to use the german word. Kohlroulade is meat that is wrapped with cabbage :) 🤍

    Okayu is delicious with crushed fried/roasted garlic chips on top! And add some chopped chives, and squeeze a bit of citrus. Lots of pepper. We cook the rice with ginger too. I suggest adding spinach. A super meal.
