Whole Spare Ribs | Oklahoma Joe's Blackjack Kettle (Disappointed Again)

  • In this video I test out the new bottom damper that I received from Char Broil to replace the damper that came with my Blackjack Kettle. If you don't know I have had issues getting temps below 250 due to the original damper not being shaped properly and allowing air to into weather the damper was open or closed. To test out the new damper I cooked whole spare ribs and used Meat Church Holy Hospel rub and for smoke flavor I used hickory wood chunks. Total cook time was four hours. See how again the kettle struggled to keep temps low, even with a new damper. 8-5-2021

    A simple fix is a aluminum pan with some warm water in it, to keep the temp in control

      I have done that, but due to how the bottom damper does not sit flush at the bottom, air leaks in no matter what. But I do have an idea to fix that problem.

      @@MoesBlackGoldBBQ it's crazy how an expensive BBQ like Oklahoma Joe would have problems I have a super cheap kettle paid $85 for it and I don't have air leak issues

      The round damper that you adjust for temps is wobbly and bends easy. When I first got it, it was out of shape. It didn't sit flush at the bottom. I contacted okj, and I was sent a replacement. It was the exact same problem I had with the previous one. I've spoken to and read comments online from people who have the same problem. It's always hard to control Temps. But there are people who say they don't have an issue. So, idk. But I'm going to make it work.

    If you wanna smoke then use a smoker, if you want to grill… use a grill. Lol. Also, water pan does wonders. And yuengling is better from a bottle. Ribs look like they came in it pretty good though

    Hey Moe I am not sure if you watch Big Lew BBQ channel but he has a blackjack kettle (as i do also) and he bought the oklahoma joes charcoal manager from their website and he stated it solves the issues with the blackjack kettle just thought you might check out his videos on that if you didnt know already!

    Little less charcoal on that snake and it’ll keep the temp lower, that’s quite a bit of charcoal tbh

      It wouldn't matter because of the flaw the Blackjack has. The bottom vent will not shut completely. It allows air in no matter how you use your charcoal. Temps will get high.

    I agree with you, seems to be letting in too much air. As we saw from your prior vid, the light coming through despite being fully closed.
    I’m shopping for a kettle, as was momentarily considering this over a Weber. Your vids have been really helpful. Thanks!

    You probably need some kind of diffuser to control the temp better....i like this one and the akorn...maybe close up some damper holes, maybe getting too much oxygen...

      I saw on bbqsmokermods they have a diffuser plate for 22" weber kettle. I'm thinking of buying it for the blackjack. I also have gasket sealants that I will use to help the bottom damper. I won't use it now. I want to film couple more videos with the way the blackjack kettle is now. I think the gasket will help fill in the gaps in the bottom damper. But for now I use small amounts of charcoal to help keep temps low. Other than that issue, is a fine made kettle.

    You need to keep your bottom damper about half way, and the top one cracked a 1/4. That should keep your heat in and your temps will me around 225. That works the best for me on my Weber kettle. I always use the 321 method and indirect cooking. Great video

      The new damper doesn't fit correctly like the damper that came with the kettle. It let's in a lot of air. The damper doesn't fit flush around the kettle. Next I'm going to do the snake method.

      The original damper did not fit flush with the kettle. It had huge gaps no matter if it was open, half way closed or fully closed. Air came in no matter what. I still have this issue with the new damper.

    Have you looked into some Lavalock gasket strips? might work if you place them just right. I’m sure you’ll figure it out bro. Keep cookin’ 🔥

      It has crossed my mind, but I'm trying to wait before I start using after market parts to fix the problem. I'm gonna test the snake method.

    Damn glad I got the kamado kettle joe over that! But hey man you did good with what you got! When I do ribs I don’t do 3-2-1 method, that’s way too long! Ribs looked great

      Thank you for watching and the Blackjack can be frustrating, but overall the ribs came out good. Not happy that I couldn't get the temp lower, but I now place small amounts of briquettes to get lower temps. I know I can't treat the Blackjack like I can my Weber Kettle. I wanted to the 3-2-1 to just relax. To spend majority of the day outside cooking, but the Blackjack had said not today lol.

      2 hour smoke at 275°, 2 hour wrap at 275°… then 10 min sauce done.

    Good vid and honesty! I am curious if the taste was there? Sounds like it was! I know a lot of folks do pit/drum cooks at 275-290 and that’s the sweet spot for them. Weird temp wouldn’t go down.

      Thank you! Taste was there. The Holy Gospel rub taste great. I was trying avoid cooking at a high temp. I wanted a relaxing day and spend time cooking. One reason why I wanted to do the 321 method. But since the damper doesn't fit flush around the kettle, it leaves gaps around the damper that cause more air to enter. Even when damper is closed, gaps are there and air enters. This is my second damper on the kettle. I'm going to do the snake method next.

      Search the Bronco in CZcams. You will see how efficient it is. Low and slow or hot and fast, it does it all.

    User error, want lower temps, use less charcoal. You putting out more heat then the vents are designed for. Use less fuel.

      I know about using less charcoal, but with this kettle it should allow me to bank a good amount of coals to the side and then allow me to maintain the temp with the bottom vent, but my kettle came with an issue with the bottom vent not staying flush on the bottom of the kettle, which allows air to enter no matter where I have the vent set at. Also in the blackjack kettle booklet, it has a diagram of placing charcoal the way I have in this video. The same way it can be done in a weber kettle.

      The same method I am using now, I use in my Weber and have no issues having temps 225-250. The second damper has same issue like the first. No matter having the damper fully open, half way closed or completely closed more air still gets in. Like I mentioned in the video, I will do the snake method next.
