I have always used torque from the elbow depends on pipe size. I learnt the hard way in my training but the common cause was improper flaring of the pipe. it is hard to teach the newbies of the trade this so the wrench is a good tool. I have had the flare under-torqued and not leaking. The point I am saying is the prep in the flare and using oil/nylog to stop biting and twisting.
