    Hi Guga!! I have to recommend a Greek traditional recipe that is so good, its called frigadeli! Here is how to make it: You cut a beef liver at small pieces and you season them with grated garlic, parsley, salt and black pepper(we also add a little bit of kefalotiri which is a hard cheese, you can use parmesan maybe but its optional ). Then you put in lukewarm water (not hot) some lamb caul fat until is tender. Then you take each piece of liver and wrap it with the caul fat. Put them in wide skewers and grill the in direct heat. I reccomed you to try it with some cold beer!!!

    Guga if you like crispy edges separate the yolk from the white and put the white in a squeeze bottle to slowly pour it over the hot oil. You can cook the yolk in any other way you like, like frying it or poaching it

    Britishman here, I used to go to a little Hog roast van that would sell pulled pork in a roll. Inside the soft white roll you'd have juicy pulled pork, pork scratchings (crispy skin bits) and warm apple sauce (with tiny bits). It was beautiful, would love to see a Guga version!

    My grown son the foodie made Thanksgiving dinner this year. He barbecued the turkey, but with the smoker attachment on his grill. As I walked up to his house, a whiff of smoke drifted by, and I said, "Wow, THAT smells delicious!" It was. It was tender and juicy and smoky and I don't remember what he seasoned it with, but it was the best turkey I'd ever tasted. I have a theory that any form of animal protein tastes better when it's cooked over an open flame.

    The only thing NOT keto was the bun. Other then that, it is the perfect keto meal.

    I love how Guga took out the second layer of pork belly before eating the sandwich... one of the most important things that make a sandwich perfect is how easy it is to pick up and eat. Can't let visual appeal ruin the actual eating experience!

    I also made your quarter-pounder burger but with dry age ground beef yup you are not the only one with great butcher connections, in fact, I have you to thank for it! I learned from you how to dry age and then I taught my butcher friend and now he sells to restaurants! and as thanks I get great cuts sometimes for free he offered a share but I said I rather have meat! a great deal cheaper for him and I get great meat for free unless it's Wagyu then I get a huge discount.

    I like to fry my eggs with about 8oz of leftover strained (maple bacon) grease as my oil. Then, if need be, I strain the grease again to store it for future use.

    I love this guy's energy, and some of his descriptions make me laugh. "As I'm slicing [the cucumbers] up, they have no seeds. These are called 'seedless cucumbers.'" A delicious-looking sandwich, but definitely not something to be eaten on the regular... I can't imagine the calorie count of a normal sandwich, much less the double-decker he used as the thumbnail.

    That sammich looks killer. Many people don't realize how much fat coats the lining of the mouth with pork belly. Using the cilantro and something sweet like the onions was a great option. Great Guga.
    As for the ridge wallet... I'm not sure how many people can drop 150.00 on a wallet. Always wanted one. Could never justify the expense.

    Guga, do you have cameras in my house???? I swear, I just did this 2 days ago! I made a pork Belly and my wife, forgive me, hates fat... So, I tried to think of a way to make my pork belly more to her liking. I made just one variation to yours. I figured, well, this is what bacon is from, and since she likes bacon, I took my thick slices and fried them in a pan like bacon! AMAZING!!! Especially good with the Truffle Mayo I made for the sandwich!
