I grew up by Chicago. I do my Italian beef in the crock pot. I add dry Italian dressing session in beef broth with peppercorns. Turns out phenomenal.

Life doesn’t always have to be so God DAmn serious all the time; MAtty continues to show this with every video that he posts. Matty, love the show. Lived in Chicago my whole life. Make sure to season the beef beyond just stock and onion. Sugar, herbs, pepper, etc. If you don’t, it’s not really an Italian beef it’s just a French Dip with Gardinara

Been fermenting my giardiniera but might use this method when I need a quick batch. The same ingredients but I add some fresh bay leaves add whole peppercorns etc, to the ferment. Love the slight heat that follows on from the jalapenos on a bite. Me and the family have a favorite sandwich using the giardineria, Salami, ham, the giardiniera, provolone, swiss, and some mayo. Toast the bread, cheeses, and meat a little add giardiniera and mayo. Tasty.
