I Smoke A Prime 1 Brisket! | Oklahoma Joe's Highland

- My mom asked if I could smoke a brisket for her and my dad's 45th anniversary. Of course I said yes. I purchased a 13 pound Prime 1 Brisket from HEB for $60. I trimmed the brisket, but I kept as much meat as I could. I wanted to preserve as much meat as I could, so their could be plenty of brisket for my family to eat. We all brisket will shrink during the cook. I seasoned the brisket with The Salt Lick BBQ. A favorite rub of mine. I started my Highland at around 10:30pm and put the brisket into my highland at 12am. During the cook, I used post oak and temperature of my Highland would range from 250f-260f. I wrapped the brisket at the seventh hour. I liked the way the color of the bark and wrapped based on that. I removed the brisket once it was probe tender. Total cook time 13 hours. 10-15-23

It takes patience to use this smoker. I've had this smoker for 8 years now. I've learned a lot about how to use it. Keep cooking on it and you will get it down.

How would you cook in this with charcoal in the main tube? Wpuld u out chsrcop on tray? Or juat in main tube floor?
The smoker comes with charcoal grates to place on the bottom of the cooking chamber.
Do you have any mods on yours I just got a highlander past weekend
What I have is a gasket around the cooking chamber, and if I need it to draw better, I add 18" tail pipe bought from auto zone to attach to the smoke stack.
Which do you prefer for smoking? Bronco or Highlander?
As much as I love my Highland, I prefer using my Bronco. It can do so much.
