- Late afternoon lunch hour on a mid-July Monday. I am standing at my kitchen window chatting with my viewing friends and family while preparing a Caribbean-style dish called Baked Beans and Saltfish with a side of plantains. (Check out my friend @lady.J3962 who inspired this meal.)

Looks yummy 😋 I got creative in the kitchen the other day and made some collard greens and added onion, saltfish and a can of red beans or kidney beans, it was so delicious!
