- Making This Candy Was A BIG Fail! Apparently potato chips and brittle DO NOT mix. It stuck to our teeth so much that we didn't want to have you guys suffer through that, so we just threw it out. Good thing we experimented with this candy on garbage day!

💑 About Hercules Candy
Hercules Candy has been on Steve’s side of the family since 1910(ish). When he took over in the 70’s, he anticipated after 10 years of hard work, he could move the business out of the basement and into a real storefront. Unfortunately, it took until 2018 for that to happen, but hey at least it happened! Steve and Terry own the shop, Craig (the social media manager) is their son, Cara (wrapper and shipper extraordinaire who is poised to take over the shop one day) is their daughter and Leah (who doesn’t love being on camera and is very elusive) is their oldest daughter. Its a great idea, but to stop oil and excess moisture mixing into the brittle, make the salted brittle first, spread chips on the table, pour the brittle over the chips and spread it all out. When you flip the brittle to stretch it, the chips will be on top. Then you can chocolate coat them to keep it all fresh and crunchy.

The first time I tried a Werther's caramel, I made the mistake of biting into it. Just one bite down, then trying to open my mouth again, I permanently loosened one of my teeth, which I later had to have extracted. So I appreciate you rejecting the too sticky factor.
I think crushed chips on top after you pour it on the table might be better.

For Fall/Halloween you should do a pumpkin seed brittle. Candied pumpkin seeds are incredible so pumpkin seed brittle will be amazing. But it is the question of shell on or off. Perhaps do a small batch of both to test it. Also maybe a small batch of plain sugar and the seeds or pumpkin seeds and pumpkin spice, or just pumpkin seeds and molasses flavor..
I see those boxes of Golden Grahams during the taste test.
I suggest making brittle from different types of cereal!

I wonder if the starch is a factor in the potato chips that changed the outcome from what everyone expected……potato candy has a very neat reaction with powdered sugar and potato and a little potato can make a good amount …. But the potato candy wouldn’t be much without it’s peanut butter or Nutella filler lol
It could be!
All the steam when the potato chips were added was probably a bad sign. Moisture is the difference between hard candy and not-hard candy. Maybe if it was cooked hotter initially to try to get even more of the water out, but I'm not sure how much more water you'd be able to remove at that point without burning the sugar.
It was not water it was fat from the chips having been fried.
@@teri526 I doubt this, because then nuts should also be a problem as they're even higher in fat than potato chips... pecans are about 70% fat by mass, potato chips are more around 35%.

I think it just ends up as being too much potato chip. It's good to mix the potato chips in brittle tho. You would maybe sprinkle them on top after.
Kettle cooked chips may hold up better because the regular chips kind of dissolve and mess up the balance of the brittle which could have caused the stickiness maybe? Also what if the chips are sandwiched between two layers of the brittle on the table instead of mixing it in the kettle to prevent the stuff in the potato chip from altering the brittle base? Sorry if this doesn’t make sense or wouldn’t work, I’m fairly new to your channel but I LOVE everything about y’all and just wanted to help (if it’s more of a help than a hinderance that is lol)
From the cloud of steam that came off when pouring the chips into the kettle, I wonder if there was too much moisture for the heat retained in the kettle to boil it all off. Maybe try adding the chips just as the sugar gets to temperature, then leave the kettle on the burner to bring the temperature back up before pouring?
I was thinking the same thing, there could be a lot of moisture in the chips especially if the bag was already open. More heat and using an unopened bag of chips might make a difference or maybe toast the chips briefly before adding them?
You guys should have kept it then ship it to anyone who wants it, I definitely would mind some of it, sounds delicious 😜

You guys could add a bit of sea salt on the brittle afterwards to add a bit more salt factor
Brownie brittle maybe a bit difficult in my mind with how moist brownies are, but I wonder if chocolate biscuit/cookie brittle would work-I’m thinking like the chocolate cookies Oreos are made out of🤔

I MAKE POTATO CHIP BRITTLE. The secret is, is to add it when the cooking process is dine. Basically you add the chips last. a you pour it on the table you add the chips and then fold it in,. or just as a topping of sorts.then the brittle stays brittle amd not soft.
Instead of sea salt on top add some crushed up potato chips.
My grams makes a honey potato chip roll kinda of like a Payday bar but potato chips instead of peanuts. It’s delicious!

what about doing it like caramel popcorn?
im no expert but you might want to try using baked chips, normal fried chips cooked in oil soak the oil in and that may be why there sticky. but love your videos

How about something like some milk and cereal brittle??? (like maybe a fruity cereal or like reese's puffs?) it should work with the brittle well! ((and be pretty lol))

Try the recipe again using a low fat chip. Potatoes are starchy and Potatoes that have been fried have added fat content. That's why it was toffee like...or chewy. Try a baked potato chip. You can't give up. Mix in sourdough pretzel bits. Hit it with the chocolate and just a light sprinkle of the sea salt.
I don't think that would have the same appeal. I get what you're saying though.

I absolutely love toffee just as is, I wish it wasn't so rare. Sticky candy is THE BEST! Candy makers really need to stop tossing out perfectly good sweets. Many of us love sticky candy.
I wish I could find more like slab toffee you break off. It's hard but softens to be sticky, and I have plenty of fillings. It's a risk I take but it's my problem only.

How about just drizzled chocolate on the tops of them and add a tiny bit of sea salt
