    I have a tree that’s about 6ft tall and I want the bush like you have. Do I wait until winter to cut it back?

      I am on my third year growing and learning. It would depend on your climate I am near Galveston. Last year I saw that while trees did not die before the first frost, temperatures in the 40s yellowed the leaves. Right now I am popping tops every couple of weeks to increase yield. Some of my trees are about 8 feet, others need more sun.
      Yes, if you cut it low, they will grow back bushier. However August is late in the season to do that (I think)
      If you cut them low to the ground and insulate them for freeze, next year your one trunk will become a many trunks. Starting out much like the one he has here. I insulted my trunks with a old black plastic pot stuffed full of pine needles, with a second slightly larger pot over that (and a brick to keep all in place). It all depends upon how hard or if you have a freeze.
