A good rule of thumb is single bevel knives are best between 10-15 degrees and double bevel is between 20-30 degrees. Then I actually just used my phone and an angle finder app that uses the phones built in gyroscope. I set the phone on the stone holder while adjusting. The smaller the angle the easier it will cut but more upkeep will be needed.
This works for my needs which are very little. I'd say if you want a warranty and better stones go with the KME, but for budget this works great and you can always buy high-end stones later and still come in much cheaper.
I also don't have any other sharpeners to compare to except the bladed ones most consumers would have. So you'll have to take my experience with a grain of salt.
Can you please do another clip with a digital protractor showing the angle of the knife as you flip from one side to the other? Does the angle stay the same or changes like the Ruxin sharpener??? Thanks in advance.
This is exactly my concern. At the end of the video 8:30 the clamp can be seen evidently tilted upwards, and so is knife's edge, consequently. I'm wondering how the angle consistency can be mantained in this case, when rotating the fixture by 180°. Shouldn't the blade be clamped perfectly horizontal right from the start?
@@pulidoggy I have had this sharpener for several years before I purchased the Wicked Edge this sharpener changes angles each time you rotate it it garbage slightly better than nothing.

Can you get replacement for all three sharpening stones.?
Since its adjustable you can find many replacements on Amazon if you search "knife sharpening system stones".

I own one you can never get it to flip the same on either side.I had it for 2 years could never ever ever get it to flip right
