According to japanese folklore, when kitsunes fall in love with humans, they become devoted wife and (if have children) doting mothers.
Combine that with the fact that youkai's moral code is somewhat alien from a human perspective and you may understand why she acts like that.
Im surprised that they did a fairly accurate depiction of a kitsune (most games and other media have degraded them into fanservice only)
She could theoretically do the most damage but because Archer's stat growth is more efficient you can put more points into strength, making his attacks stronger during UBW (which lasts 3 turns). A single Caladbolg in UBW can do ~12000 damage, it's pretty ridiculous.
And Caster's skill is a 5x boost, I think.

Guys you are forgetting a really important aspect of the game's mechanics...A Caster with EX stat magic and a Caster with B to A stat magic but with all the others stats evenly raised, ACTUALLY does the same amount of damage! Haven't anyone noticed that even when you raise the DEF or LUCK stat your attack and magic damage goes up too? So Caster can be as good as anyone without too much effort if you know how to use her... just not for a 1st time playthrough

That's usually how it works with magic classes vs. physical classes in an RPG. Warrior-types (eg. Saber) are generally pretty straightforward and there's no real difficulty or power curve when it comes to leveling--their power increase is linear. Mage-types (eg. Caster) start off weak and extremely difficult to play as, but become overpowered as they reach higher levels--their power grows almost exponentially
It's a common RPG trope that goes back to D&D

That would be a good tactic, but that formal wear is obtained by beating Shiki, and the stun move doesn't work on her often enough. Aphotic Cave is much better than the regular guard, generally you won't take more than 100 damage from anything when you use it. I would say it's better than Rho Aias since it doesn't bite a huge chunk of MP when it's successful, but it really depends on the circumstance. Caster is generally the worst, she just has a generally safer playstyle vs Shiki than others
I said she's the most useful servant for facing down Shiki because she can stunlock her and block for less MP (negative MP on a skill) without worrying about it getting broken, or having them use a skill and doing high chip damage. Saber against Shiki usually results in death pretty quickly when you run out of MP. Good luck with that Thrice Setting Sun spam on your STR build without high endurance and no good block. Saber is easy mode for everything BUT Shiki. Archer is the most fun overall.
She's weaker but can be more powerful. From what I've heard taking down Shiki with her is a lot easier than with Saber or Archer, though I've only fought her with Archer. She definitely is very powerful at the end but requires more thinking and strategy to handle, whereas Saber is just Attack and heal, and maybe buff once in a while and Archer is just attack, project, UBW and restore MP, win. Caster requires you to carefully plan your actions more but is more effective when you do.

I chose her over Archer and Saber because I wanted a challenge playing the game. As for her personality, she has her quirks yeah, but she could be worse. Anyone ever hear of Shion Uzuki before?

This is getting to be a very pointless argument, you can insult Caster all you like but if you didn't read the notes before selecting servants, she is meant as a much more difficult story line role, If you find her weak it's only because you don't understand how to play her, which isn't an insult. She's meant for players who are looking for a more challenging run through. Anyone can run through the game with Saber, she's a direct approach type after all.
