  • This video features the steps to make Persian Mast-o Khiar.
    This is a traditional Iranian dish that is served as an appetizer, side dish or a cool and refreshing salad. It’s also been popular for decades as a mezzeh chaser for chilled shots of vodka! The dish’s name translates to yogurt and cucumber which are its main ingredients. A handful of aromatic herbs, tangy dried fruits, spices and crunchy nuts perfect this dish. Variations of this dish are seen in almost every culinary culture from Morocco to Iran, all through the Mediterranean and the Middle East. A close cousin of Mast-o Khiar is Tzatziki. You can add raisins or craisins, and many Persians sprinkle crushed, dried Damascus rose on their Mast-o Khiar. Get creative and make it your own.

    Mast-o Khiar Recipe
    Serves: 4-8 (depending on whether it’s served as side dish, salad or a mezzeh chaser for your cold vodka shots)
    Ingredients:
    2 cups plain yogurt
    2 Persian cucumbers, cut into pea-sized pieces
    2 tbsp minced fresh (or dried) mint leaves
    Salt and Pepper to taste
    Optional ½ cup finely-chopped walnuts
    Optional 2 tbsp raisins (or craisins)
    Optional ¼ tsp garlic powder
    Optional finely-chopped Basil to taste
    Optional finely-chopped Thyme to taste
    Optional finely-chopped Tarragon to taste
    Optional dried Damascus rose, crushed (You can find it in Mediterranean, Iranian or Arabic markets)
    Directions:
    Combine yogurt, chopped cucumbers, minced mint leaves, chopped walnuts, raisins, and garlic powder and any other optional ingredients from the list.
    Add salt & pepper.
    Stir to combine all ingredients
    Taste to see if additional salt is needed
    Let it chill in the refrigerator for a minimum of one hour for the flavors to meld.
    You can store in the fridge for up to a week and enjoy.
    NOTE: Water will separate from yogurt after a day in the refrigerator. This does not mean the yogurt dip has gone bad; it's is normal. Simply stir it up and enjoy!
    Serving suggestions:
    Serve Mast-o Khiar chilled, as a snack on its own or as a side dish for salmon, shrimp and grilled chicken. It adds flavor to sandwiches, tacos, and gyros as a sauce.
    It makes a great chaser for shots of chilled vodka!

    My family recipe adds nuts, raisins, dill, mint and garlic as well as a bit of honey at the end - it's heavenly!

    Every new year I go back home and stock up for the year at my favorite Persian market. I almost grabbed those roses but I didn’t know what I could use it for. That’s a great tip thank you so much! I’m Armenian, my husband Cuban and he is just as obsessed as me for Persian Food! 👍🙏

    Looks delicious!! 😋 looks more like what my fam makes we call Obd-o-kiar that’s more watery and has raisins in addition of mint and walnuts. A flavorful refreshing treat on a hot summer day 😉

    1 tablespoon dried mint fully crushed using both hands do the rub. Never dice your Khiar, use a grater or food processor. You can add dried Rose also, for Walnut u must leave it in a bowl and filled with spring water and change the water at least 3 times within the 12 hours, this way the skin wears off plus all the oil and grease comes out, it will taste so much better!

    I have an easier way of making this for elderly people who can't chew! I put all of them inside my food processor including Garlic, Parsley, and mint etc.
