And as far as Shetland is concerned, it is one of those places - far away and distant - of which I have only read and maybe seen a very occasional video. Thank you for sharing. Perhaps some day I will manage to get to your neck of the 'woods' so to speak and sample some of your delightful food fare as well as the ambience of your company. I'll dress warmly though. I just came across this , I ate in frankies several times throughout 2013/2014, have to agree the meals were delicious, all cooked to order, whilst it appears you don't get many chips, I was full every time I ate there!!
I complained to the manager at my local chip shop one day about the fish wasn't cooked, he said how do you know it's not cooked, I said because it's ate all my fucking chip's, have a nice one, be from Mike in UK

Fish and Chips is the best fast, comfort food, especially, if it's done the English way...I much prefer English-style chips to American-style french fries...Like the hamburger, it's, also, a great equalizer, in that, everyone, from the barrister to the blacksmith eats fish and chips...The Royal family, probably, love eating fish and chips, too...Of course, it's, probably, specially delivered to Buckingham Palace...Pizza and hamburgers are delicious and comforting, but, for me, they can't beat good, English fish and chips...You can't go wrong with a serving of warm, freshly made fish and chips with good tarter sauce and, of course, accompanied by a nice, cold Red Stripe beer or Heineken.

I'd like to see a bit more on how the fish is prepared. What is in the batter. Type and temp of the oil for the fish and for the chips. Type of potato used for the chips.
Fish batter is just flour, eggs and water. Best oil is beef dripping but that is rare these days, most places use rancid tasting vegetable oil which has a bitter aftertaste unless you drown everything in a pint of vinegar. Potatoes need a decent sugar content, not too starchy. Maris Piper is the type I most commonly hear of as a good chipping potato, I think there are better but more rare varieties.
