those are special combos and don't need to be selected to be fired.
the green shot of the cannon uses 2 cannon ammo and is called "Cow Puncher" : down, up, down, machinegun.
orange mortar shot uses 2 to 5 mortar ammo and is called "Crater Maker" : down, down, up, machinegun.
there are other combos too, you find easily on internet. in the first game, each weapon has 2 secret combos, and in V8 Second Offense, each weapon has 3 secret combos.
